So many sweets being made in our home lately! First, all the the chocolate snack cakes for the instruction video and now my all-time childhood favorite…Tastykake Butterscotch Krimpets. Unlike Twinkies, there’s no “Krimpet” pan I know of yet, so I ended up using my Twinkie pan. If you don’t have a pan like that, you can either make them in a 4×8 loaf pan and cut them into long rectangles or just make them as you would cupcakes. If you need to be DAIRY FREE, no worries! Continuing in the series of gluten free snack cakes, what would the collection be without the iconic chocolate cupcake with the white swirls on top? This recipe is gluten, grain, dairy, soy and gum free and the cake is sweetened with coconut sugar or maple syrup. If you’re grain free, be sure to find a confectioner’s sugar that suits your needs. For some, Swiss Rolls and Yodels are probably interchangeable, but I’m sure there are others who know the slight nuances of them. Too bad us GF people can’t do an official taste test anymore. Like Ring Dings and Ding Dongs, these cakes used to be regional fare and some had access to one or the other (or in some cases, both). One of my kids sent me a link to her favorite snack…a buffalo blue cheese mix that she said she was her current obsession. Then challenged me to make it GF. Even though I am the only need-to-be-GF person in the family, everyone else loves to throw a challenge at me. Every now and then, a certain food from my gluten days haunts me and I have to do something about it. Tortellini is one of those foods from my childhood that I just loved.
