This is one of my favorite recipes. I now add greens beans to this dish instead of having carrots on the side.
1/4 cup sweet chili sauce (gluten-free)
1/4 cup soy sauce (gluten-free)
1 Tbsp garlic, minced
2 tsp sesame oil
2 tsp red pepper flakes
1 package firm tofu, pressed then cut into 1-inch cubes
1/4 cup cornstarch
2 cups green beans, frozen, thawed
1/3 cup scallions, chopped
rice, cooked
toasted sesame seeds - garnish

This beautiful cat is Mr. Teddy, he is my cat and he is the reason I have not had the time to do any new recipe posts in a very long time. Tried this salad a long time ago and I've been eating it almost every day since. The Creamy Herb dressing is just so addictive! It came from one of my favorite food blogs...Hot For Food. She uses it on her Vegan Chop Salad. Only changes I made to the dressing was I removed the parsley and dill then added some coriander powder instead. I keep my kale salad simple - just kale, romaine lettuce, chopped cucumbers and green onions. I know Hot for Food has 2 Caesar dressings on their blog that I'm sure would be great on a salad. This is my new addiction. Its healthy, quick to make and delicious. There are so many different types of veggies that go with this Asian style sauce. For my husband who prefers cooked to non-cooked foods I used cooked broccoli and snow peas. For my bowl, I used raw veggies. Its no secret that most people have a tendency to indulge in too many fattening foods and drinks over the holidays. I know I certainly did! I even combined dessert with my drinks by having rum and coke floats! Now that the dust has settled its back to eating properly again. The good news is it won't be hard to enjoy your veggies if you have them with some ranch dip. You can use ranch dip for so many things. Meet my new addiction! I've seen many chickpea salad recipes on-line and I would have tried them sooner if I had know they were going to taste similar to potato salad! But unlike potato salad its much easier to make and its better for you! The recipe I used came from To My Bowl. I did adjust the ingredients used but the main change is I added black salt to give it a nice eggy taste.
