Fish Stick Burrito Bowl
The Newlyweds Cookbook
by Forrest & Courtney

Everyone loves a good burrito bowl. There is nothing quite like diving in fork first into a big bowl full of your favorite ingredients. Honestly, it’s also a lot easier than making a burrito in its original form. No wrapping, no broken wraps, no portion control… We decided that our protein of choice for tonights burrito bowl would be none other than Gorton’s Premium Cod Fish Sticks. They are coated in crunchy panko breadcrumbs and made with only the finest wild-caught Cod fillets. If you are coming in with any preconceived notions about what you think fish sticks are like, throw them away ..read more

We love Chicken Pot Pie, and this week I had a major craving for it, but since we’re on a ketogenic diet, it seemed kinda like a no-go, and our Chicken Pot Pie Soup seemed like a more natural choice. But after a little trial and error, I came up with a Keto Friendly Pie Crust Recipe so that I could enjoy the Chicken Pot Pie I’ve been dreaming about. So, I present to you, our Keto Chicken Pot Pie. Pie Crust Ingredients:2 1/2 cups almond flour 1/2 tsp salt (we use Redmond Real Salt for everything! such high quality) 1/2 tsp xanthan gum 2 oz cream cheese 7 tbsp unsalted grass ..read more

Keto Almond Cake

My world of baking has been expanding for the past few months. I had always loved baking chocolate chip cookies with my girls or whipping up some banana muffins, but recently I have begun diving in a little deeper. I made my first layered cake last week for Christmas (the girls were so excited to celebrate Jesus’ Birthday!) with the most delicious frosting I have ever had! The girls even blew out a candle for Him Then…we made cinnamon rolls, coffee crumble cake, and lots of homemade bread (is that considered baking?) Forrest and I follow a strict keto diet 6 days a week with a 24 hour “splurg ..read more

Keto Fat Bombs
The Newlyweds Cookbook

One of the things I love about these Keto Fat Bombs is the fact that if I am having a craving for dessert or need a quick running-out-of-the-house type of snack, I can grab one out of the freezer and I am instantly satisfied and full. One of the challenges of the keto diet, we’ve found, is that a lot of food needs to be prepared. It is not very “on the road” easy either. I prep a lot of snacks and meals for a quick lunch grab. Thankfully our lifestyle let’s us be homebodies when we want to be, but the prep time still helps. When we had a road trip a month or so ago, I baked some almond flour k ..read more

Creative Down Time with OOLY
The Newlyweds Cookbook
by Forrest & Courtney

The holiday season has, unsurprisingly, been a little hectic. This is definitely not a rant against Christmas, or really anything to do with Christmas, other than the schedule (and accompanying cold weather) can really make our home life feel a little…well, busy! It’s a good busy really. Christmas shopping, Christmas parties, baking cookies with friends, driving around to snoop on Christmas light displays, buying a Christmas tree, family get togethers. It’s all good! But it leaves this mom feeling tired and in need of some downtime. Our little ones give off this same feeling at times, too ..read more

Fisherman’s Egg Benedict with Crispy Battered Fish Fillets
The Newlyweds Cookbook

Thanks to Gorton’s Seafood for sponsoring this post! Have you ever met a person who doesn’t love brunch? I sure haven’t… Brunch is a magical time of the day when the lines between breakfast and lunch begin to blur in the most delicious way. I consider it about 70% breakfast, with the remaining 30% of the meal coming from lunch items sneaking their way into my food. One of our family’s fondest brunch memories came from a tiny little breakfast spot near Cape Cod. An unassuming little cottage – it wasn’t really anything that you’d ever notice on your own. But whatever it lacked in curb appeal it ..read more

Christmas Stories
The Newlyweds Cookbook
by Forrest & Courtney

There is almost nothing better than bringing up all the Christmas bins from the basement and reminiscing over all the decorations, ornaments, festive garlands, and stockings that come out. We even have one bin that is completely dedicated to books. Christmas books are our favorite books to read with our girls, and our collection seems to grow each year. I love the magic that comes out with each turning page and watching our girls get filled with anticipation with each new story. Forrest and I got our oldest daughter the Hooray Heroes Personalized Christmas Children’s Book, (and will definitel ..read more

Keto Lemon Bars
The Newlyweds Cookbook

Our ketogenic journey is still marching on, and we’ve been continuing to work on how this new way of eating can fit as naturally into our lives as possible. We don’t like to feel like the meals or snacks we’re eating are imitation this or pretend that. Desserts are one of the toughest pieces of the puzzle, which is why we’ve been trying so hard to perfect this Low Carb Lemon Bar Recipe for the keto diet. At approximately 4 net carbs per serving, you can pop one of these refreshing, tart lemon bars and not feel guilty. But best of all, you’ll actually feel like you had ..read more

Gift Guide For Your Foodie Friends
The Newlyweds Cookbook

I got a good response from our Gift Guide for the Husbands that I recently posted and decided I needed to do one for the Foodie (after all, this is a food blog!) I wanted to share some of our favorite kitchen products / food items / essentials. This is not sponsored, all thoughts are our own + we just want you to enjoy the kitchen and cooking as much as we do. And this is some of the stuff that has grown our love of cooking together. spiralizer – Forrest’s grandmother gifted us a Kitchen Aid spiralizer attachment several years ago before it was “cool”, and that thing gets so much use in our ..read more
