These are one of my favorite things in the world. They are healthy, easy, and taste EXACTLY like a ball of cookie dough. And who can disagree that a spoon of cookie dough is one of the best things on this planet?? I love that I can feel like I’m having a hunk of cookie dough when it’s actually a healthy treat.
Huge bonus: my kids love these. They call them treat balls, and they feel like they’re getting this really dessert-y treat even though it’s filled with oats, almond flour, and healthy fats. Such a win!

Sheet pan dinners are a whole new level of dinner win for me. I love one pot dinners SO much, but sheet pan dinners are an even higher step towards dinner glory than one pot dinners because everything goes down in the oven where there is zero babysitting, AND I think sheet pans are easier to clean.
Sometimes sheet pan dinners tend to be a little boring – roasted meat beside roasted veggies. I like to spice my sheet pan dinners up a bit and make them more fun and unique. When we did our first round of Whole 30 years ago, I found out I was pregnant about half way through, and from the second I become pregnant to the second my babies are born, I crave sweets like NOBODY’S BUSINESS. But on Whole 30 you can’t have sweets.
We were at the grocery store one week, and I found these things called date rolls – only ingredients were unsweetened coconut and dates, which are both allowed on Whole 30. Technically you’re not supposed to have anything that even resembles a treat (for the purpose of breaking sugar reliance), but I was like screw it, I’m growing a human.

Hey internet friends! I have been so MIA since February, so I thought it would be fun to do a mini photo-dump from the past few months to give you a quick update on life (not that a whole lot has changed ). But just to give you some insight into our life since February!
Insight 1 . Being outside. Since the weather has turned warm (THANK YOU LAWD), we have been outside as much as we possibly can be. This salmon is one of my new all time favorite things to make. It’s SO easy (the easiest way to make salmon ever – just pop it in the oven and “buy byeeeee” for fifteen minutes), the salsa on top is fresh and LOADED with flavor, and the whole thing is a healthy, hearty, satisfying week night meal!
When I make this, I prep the salsa during nap time, and when it’s dinner time, all I have to do is throw the salmon in the oven and we’re good to go! I love those easy nap time prep recipes. Mom life hack for sure!

This eight ingredient dinner (not including whatever you serve it over) is not only incredibly easy to make, it is LOADED with flavor thanks to the garlic, shallot, ginger, lime zest, basil, and coconut milk. All of that goodness simmers together just until the chicken is cooked through, and it is pure heaven!
Since we were just doing whole 30, I served this with cauliflower rice, but I’ve made it before with regular white rice, and it was so delicious that way too!

This low and slow, simple ingredient, HUG IN A BOWL will make your whole week warm and cozy. I’m not sure there’s a more delicious pasta sauce than a bolognese. It’s full of flavor-rich ingredients, and it simmers for two hours (or three, if you want), allowing those flavors to deepen and intensify even more.
Toss this goodness with some zoodles or spaghetti squash (or regular noodles if you aren’t doing Whole 30!), and you’ve got a bowl of happy sitting on your dinner table. It tastes good to eat, and it feels good to eat, that’s my favorite part about Whole 30 food.

What is it about a one pot meal that is so DEEPLY satisfying? It feels like such a huge win. So uncomplicated, so little cleanup, so efficient – I just love it. There’s something extra special about one pot pastas, because…I mean, it’s obvious right? Pasta is life. Add it to anything and up your awesome factor by at least fifty percent.

Hey friends! Do you meal plan? I am not usually a huge planner with things – more of a “fly by the seat of my pants” kinda gal, BUT if I don’t meal plan, and I try to go to the grocery store without knowing exactly what I’m buying groceries to make that week, you’d think I was there to rob the grocery store versus buy food based on how anxious I feel. It’s not good. I get super overwhelmed trying to “wing it” while I’m at the store.
