I have had a fantastic bank holiday weekend. I have a good swim, then when I went back home I watched old films! I watched plenty of 80’s comedy films. I watched plenty of Carry On films! I didn’t do much cooking this weekend. But I did make pan-fried chicken and I ate this with creamy pasta. I like batch cooking so that I don’t have to worry about cooking later in the day. I am sorry I have missed my blogs lately, but unfortunately, I have been in hospital for a week to have my infected leg treated. An ambulance was called to my home and the paramedics decided it was best to be treated in hospital. I was taken to St Georges hospital in Tooting. There I was cared for very well by the nursing staff, who were very kind, even so, I  was glad to get back home. At home, I sent a thank you card to the ward thanking them for taking care of me. Hi, I am Kim. I am 35 years old and I am raising money this year for the Down’s Syndrome Association (DSA). I am taking part in five events across the year, all of which will push my physical and mental abilities. I chose the DSA as my boss at work has a son aged six who has Down’s syndrome. I have been keeping well.  I have been making healthy Chinese food. It’s really simple, I put some pineapple, mixed with spices so it’s sweet and sour. I then added noodles and chicken and after mixing in a little bit more spice such as salt, pepper, red chili and red chili jam I then let it bubble and simmer.  I could smell it from the steam. What I did was I had some leftovers which I ate in the afternoon. It tasted really good. At the same time when I was cooking, I was tasting the flavours to check. The bank holiday weekend weather was disappointing. We were hoping to go somewhere nice to sit in the sun and have a picnic but no such luck. Instead we did most of the gardening and a local walk. What we always enjoy with breakfast is toast with marmalade especially if it’s homemade! It tastes much better than ones we buy in the shop. So we decided to make a fresh batch of homemade marmalade! Normally the recipe calls for fresh Seville Oranges, but these were not available in the shops. Mum had a quick method using tinned Seville Oranges. I have new morning routines now that I am swimming again. I have a lovely shower before having a quick pre swim snack, I have a chicken and mayo sandwich. After my swim I put my towels in the washing machine. When I am waiting for my washing I keep myself entertained by listening to music. I do a bit of my housework such as putting the rubbish or recycling out. Sometimes I clean my room if needs cleaning. On Sunday we went to the cemetery and took flowers to lay on nan’s grave as it had been her birthday this week. Although she died many years ago, I still miss her and remember her as one of my best friends. Recently at home, we have talked about the grandparents and what they would have made of the last 18 months. At the same time like other people, I have put on a few extra pounds.
