This sauce makes the perfect seafood starter accompaniment for your Christmas Feast. It’s good with absolutely any seafood and any leftover sauce is also delicious with turkey so it’s well worth making. The little pinch of cayenne doesn’t make things spicy so much as just brighten up the sauce. The main flavour here is the shallots, white wine and that punchy KEEN’S mustard powder you most definitely have hanging out in your pantry. Top Tips: You can choose your desired sauce thickness by how much you reduce the liquid. In the images I’ve used it to ½ a cup before adding the cream. If you w ..read more

Chicken Noodle Slaw

The sun is shining and I’m in salad mode. This chicken noodle slaw really hits the spot, full of vibrant colours, crunchy textures and a super flavoursome dressing. I used the classic KEEN’S Curry Powder for an instant easy flavour hit. The curry powder is balanced out by coconut milk for creaminess and lime for acid plus a few other tricks. And don’t worry, you’re not opening a can of coconut milk to just use a couple of tablespoons. The remainder of the coconut milk is used to poach the chicken breast, so nothing goes to waste. I love using soba noodles in this salad, they give it body and ..read more

I love simple flavour combinations and cacio Pepe pasta is one of my favourite meals. And Parmesan cheese and black pepper just belong together. Fragrant pepper and the umami saltiness of fresh cracked blacked pepper are a great time, cauliflower is the perfect vehicle to let them shine. These little fried cauliflower bites are so moreish and packed with Flavour. The sesame seeds add a nuttiness that’s very welcome. They are also the best way to use up leftover pickle brine. That stuff is full of flavour and shouldn’t be poured down the sink. I use it marinate chicken and vegetables. Add the ..read more

You could use any potato but I think the kipflers ‘s shape and texture works really well. Just a really good time. Ingredients 1 kg kipfler potatoes Extra virgin olive oil to cook 1.5 tsp salt 1/2 tsp chilli powder 1.5 tsp thyme 1 tsp garlic powder 1 cup mi ..read more

I love recipes like this, ones that marry fresh ingredients with pantry staples. And KEENs Curry Powder is a classic Australian pantry staple. When they asked me to come up with a new recipe I couldn’t wait and this one is a winner: Ready in 15 minutes and full of flavour. Baking salmon is such a reliable and easy way to cook it. You end up with minimal mess, perfectly cooked salmon and your whole house doesn’t smell like salmon. A real plus when you’re still convincing your partner to eat fish (he was a fan of this one!). I love serving this with coconut rice and green beans or any other gr ..read more

Last lockdown I was really into cooking complicated stuff from scratch just to keep myself entertained. This lockdown feels different. I just want simple and delicious things to eat for dinner that are quick to make. These skewers fit that description to a tee. The flavour is so addictive, the perfect balance of sweet, salty, sour, and a little hit of bitter from the mustard powder. It’s that combo that keeps you coming back for more, especially when you have the zest and refreshing sauce to dip them in! I love working with the folks over at KEEN’S to develop recipes because I feel lik ..read more
