Lazarakia buns (Greek Easter Lazarus breads)
Taking the guesswork out of Greek cooking…one cup at a time

This Easter be sure to try making Lazarakia buns! These Greek Easter Lazarus breads are fun to make and delicious to eat. They are slightly sweet and filled with raisins, nuts or chocolate chips (or a combination of these). Everyone loves Lazarakia, but if you are baking with young children, they will especially enjoy shaping them, and the tradition and meaning behind these sweet little breads. Growing up, and today, my favourite Greek holiday has got to be Easter, or Pascha as it is called in Greek. Everything about this time of year makes me feel fulfilled, and blessed and so grateful for m ..read more

Tiganopsomo with feta (Τηγανόψωμο με φέτα)

Delicious packets of fried dough filled with soft and creamy feta cheese. These Greek fried breads are perfect as part of a light meal, vegetarian meal. Drizzled with honey they also make a sweet addition to a mid-afternoon tea, or buffet table. Growing up Greek we always had feta in the refrigerator, and my parents found so many ways to use it in their cooking. Whether they were making sesame coated fried feta drizzled with honey and walnuts, or a favourite breakfast of feta and tomato on bread, feta made an almost daily appearance. Even when they didn’t incorporate feta in a recipe, there w ..read more

Marble halva
Taking the guesswork out of Greek cooking…one cup at a time

This marble halva combines the wonderful flavour of cinnamon and chocolate. Making this classic Greek semolina dessert is so easy, and only requires a few simple ingredients. It is made entirely on the stovetop, so you don’t even need to turn on your oven. Growing up in a Greek family, we fasted for a large part of the year. That means no dairy, eggs or meat, chicken and fish. Still, sometimes you need dessert so my parents had a great collection of vegan desserts available like loukoumades, tahini honey cookies and many versions of halva, including a delicious halva with apple and raspberry ..read more

Sesame coated fried feta with honey and walnuts
Taking the guesswork out of Greek cooking…one cup at a time

This quick and easy Greek appetizer or meze is a beautiful combination of flavours and textures. The feta is coated in semolina, egg and sesame seeds and it is fried until the outside is crispy and the feta is warm and soft. To serve, drizzle with honey and sprinkle on crushed walnuts. Growing up Greek, feta was practically its own food group. There was never a table, or a meal, that didn`t incorporate this quintessential Greek cheese in one way or another. Whether it was presented as a whipped feta dip, served the base for an elegant meze like feta and fig crostini or made its way into a fri ..read more

All the great Greek flavours wrapped up and warmed up; tomatoes, olive oil, Kalamata olives, herbs and spices, and of course, feta! This is the perfect appetizer for entertaining, Greek-style! Some of the best Greek mezes star feta! Growing up in a Greek household, there was always feta on the table, in one form or another. Commonly prepared appetizers and snacks were whipped feta dip, and sesame coated fried feta with honey and walnuts. When it was time for breakfast we were often served tomato and feta toast – to this day this is one of my favourite ways to start the day! As a Greek family ..read more

Cod and skordalia (Μπακαλιάρος και σκορδαλιά)
Taking the guesswork out of Greek cooking…one cup at a time

As Greeks, this is a meal we always enjoy on March 25th, the day of Greek Independence and the Annunciation of the Virgin Mary. It is a delicious combination of salt cod, lightly floured and then fried, served with a side of very garlicky, and tangy mashed potatoes. I like to think of this meal as the Greek version of fish and chips! This easy preparation of the cod, referred to as bakaliaro, is just one of the ways we enjoy this mild flavoured white fish. Other ways I enjoy salt cod is by baking it in a tomato sauce when I make cod with eggplant and potatoes. Fresh cod is also great, and can ..read more

A delicious way to serve this quintessential Greek cheese! A block of feta baked until softened and then drizzled with honey and topped with fresh mint and chili flakes. The combination of salty, sweet, minty and with a touch of heat is absolutely amazing. When I was a kid, my Greek parents entertained all the time. When time was limited, their Greek hospitality shone through with easy recipes, many of which were made with feta – which was always available. They often made a super simple whipped feta dip recipe, offered an elegant feta and fig crostini, or popped baked feta wrapped in filo do ..read more

Halva (Χαλβάς)
Taking the guesswork out of Greek cooking…one cup at a time

Halva is a traditional Greek dessert that is made with semolina. The semolina is toasted in olive oil and is then boiled in a flavoured syrup until it is thickened. Raisins are added and the semolina mixture is transferred to a mold until it is cooled and set. Have you ever made a bowl of Cream of Wheat cereal and not been able to eat it right away?  Maybe you had to tend to a fussy baby, a pesky telemarketer or a parcel delivery (hurray for on-line shopping).  No matter the interruption, when you finally settled in to add milk to your porridge, you were faced with a solid mass ..read more

Four simple ingredients and you get the most delicious meal. All you need is spaghetti, olive oil, mizithra cheese, a bit of salt and about 20 minutes to get a comforting Greek meal on the table. This is a weird recipe, but it’s one which is perfect to have available when you 1) haven’t done your groceries and so have nothing else to cook, 2) have about 15 minutes to throw dinner on the table, 3) have a houseful of hungry kids to feed, 4) are alone and just need something delicious to fill your belly so you can get on with your day or, 5) would rather be knitting. Why this recipe is great Qui ..read more
