How to make a BBQ dry rub I often get asked how to make a simple BBQ rub, in the video below I show you how I work with ratios of ingredients which can be scaled up easily, this is a solid all purpose bbq rub for chicken, pork, vegetables and even seafood. Kimchi Burger Burgers are awesome, and come in a wonderful variety of types. I’m also a big fan of kimchi, so wanted to pair the two up to make an epic kimchi burger, and went for kale as a bit of green instead of lettuce. I cooked the burger on the Black Box BBQ Ascua parilla grill over cherry wood to add to the flavour, getting a nice sea, and cooking to medium, then cooked the kale in a pan over the direct heat of the logs in a little coconut oil for a few minutes. Epic Smash Burgers Cooking Smash Burgers on the griddle is one of my favourite ways to cook a cheeseburger, you get a nice crispy crust and because they are cooked so quickly you get a lovely juicy burger still. I love them so much, I had my own custom smash burger press made, (it cooks awesome tortillas too) you simply place a ball of your mince, chuck twice ground on medium, chuck a little coarse sea salt and black pepper on top, and then smash away with the press. Using a digital thermometer such as a Meater + to cook chicken on the bbq makes it much less of a worry. Many people do worry about cooking chicken on the BBQ, not knowing when it’s ready, and cook indoors to the time on the pack, massively overcooking it. Are the juices running clear? It’s not easy.. However using a Meater to cook a chicken on the BBQ makes it easy, with great results of a juicy smoky chicken that’s perfectly cooked and safe for you to eat. Masterbuilt Gravity Smoker Brisket This was my first Masterbuilt Gravity Smoker brisket, however I have smoked a fair few before. I only have a small piece of brisket that I wanted to do a test cook on, I will be running a full packer brisket on the Masterbuilt 560 grill shortly, but this was good enough to see how well a longer cook would go on the grill. I also popped on a rack of short ribs to keep the brisket company (wouldn’t want it getting lonely now).
