I adapted this recipe from Da Filippo Restaurant in Sorrento, Italy. Leftover risotto is excellent for making Arancini {Rice Balls{.
Lemon Risotto
Serves 4
Ingredients
3 tablespoons butter, divided
1 onion, finely chopped
1 3/4 cups arborio rice
3 ½ cups water
1/2 cup lemon juice
⅓ cup heavy cream
1 tablespoon finely grated lemon zest plus additional for garnish

Roasting a whole chicken is easy and pays off economically. Not only do you get a great dinner but the leftovers are so good. I usually make a pot pie and chicken salad from the leftovers. This recipe I adapted from the Big Sky chef on the Magnolis Network is the best roast chicken I have ever made.
Ingredients
For the chicken
4 lb whole chicken
2 teaspoon smoked paprika
1 tablespoon salt

Ingredients
1 1/2 cups (180 g) all-purpose flour
1/2 teaspoon baking soda
1/4 tsp sea salt
2 large eggs
2 medium-sized ripe bananas (1 cup mashed)
1/2 cup plain or vanilla Greek yogurt
1/4 cup pure maple syrup
1/4 cup brown sugar
½ cup chopped walnuts or pecans

Preheat your oven to 350ºF (176ºC), and lightly grease a 9 x 5 loaf pan.
In a large mixing bowl, combine the flour, baking soda, and salt. Set aside.

Ingredients
8 oz penne pasta
2 tablespoons butter
1 garlic clove, minced
2 tablespoons chopped fresh chives
1 ½ cups shredded cooked chicken
1 1/2 cups heavy cream
1/4 teaspoon salt
1/2 teaspoon pepper
1/2 cup shredded parmesan

Cook the penne according to the directions on the package. Drain and set aside.

Escarole, Bean, and Sausage Soup with Parmesan Cheese
This is a classic Italian soup. Feel free to substitute the escarole with other greens when escarole is not available in your market. This time I substituted the escarole with one bunch of broccoli rabe.

Grilled Asian Tuna Steaks
Seasoning
1 teaspoon dry mustard
½ teaspoon ground black pepper
¼ teaspoon smoked hot paprika
¼ teaspoon dried thyme
⅛ teaspoon dried rosemary
¼ teaspoon onion powder
¼ teaspoon garlic powder
¼ teaspoon salt
Grilled Tuna
2 Tuna Loin Steaks, 1 inch thick
Rub Seasoning
4 teaspoons sesame Oil
Directions

Fish Fillets Baked with Seafood Stuffing
Ingredients
Seafood Stuffing
6 oz fully cooked shrimp, peeled, deveined & chopped
6 oz crabmeat, fresh or imitation, chopped
4 oz cream cheese, softened
1/4 cup mayonnaise
1/4 cup Parmesan cheese
1/2 cup mozzarella cheese, shredded
1 t garlic, minced
1/2 teaspoon Old Bay seasoning
juice of 1/2 a lemon

1 lb thin white fish fillets

1/2 cup panko breadcrumbs

Shrimp Cocktail
2 servings
Ingredients
1/2 teaspoon salt
10 medium shrimp shelled and deveined
¼ cup chili sauce
¼ cup ketchup
2 tablespoon horseradish
2 tablespoons lemon juice
Directions
In a medium saucepan bring water to cover the shrimp and salt to a boil. Reduce heat to low and immediately add shrimp. Cook until the shrimp curl and turn pink, about 3 minutes. Drain, pat dry with paper towels, cover, and refrigerate.
In a medium bowl, combine the chili sauce, ketchup, horseradish, and lemon juice. Cover and refrigerate for one hour to let the flavors meld.
