I made yesterday mitrashi dango, basically rice flour + sugar + water boiled for about 6+ minutes and then put in ice water to finally put them in a serving plate. The problem is the balls didn't float in the 5 minutes lapse boiling water, they stayed in the bottom of the pot, tried boiling for another 5 minutes, but even so the balls didn't float. The balls ended up being hard and chewy like dense bread and today these have a harder and dry center.
