Hi all,
I was gifted a Borgo De Medici gnocchi kit but accidentally threw away the box with the recipe on it.
I've messaged the company through multiple channels but never heard anything back.
The box simply came with wheat flour, potato starch and some gnocchi paddles.
I am fairly new to making pasta/gnocchi so would anyone have an idea on how to throw some gnocchi together?

Hello! While in Europe I frequently cooked this wonderful pasta recipe someone there recommended to me, but I've tragically forgotten the name! It started with spaghetti and the second word started with an M. Not marinara, not mostaccioli, not meatballs. It used a tomato based sauce with wine in it. It was a fairly involved sophisticated recipe, not one of the "easy 15 minute" recipes. When I try to google "spaghetti m*" I just get drowned in basic meatball and marinara results. Does anyone have a ..read more

Guys, I'm at a loss.
So I'm using two eggs per cup of flour and here are my problems:
Dough always comes out too sticky, is never that bright yellow color I see.
No matter how much dough I add it almost always seems to continue to be sticky in the middle of the roll
After resting in saran wrap, when I feed it through the machine, the inside is sticky
It seems like such a simple process that I just can't get a grasp on
Recipe:
Two eggs
1 cup flour
1 tsp salt

For 2 people
-1-2 tablespoons of olive oil in the pan over low heat - 2 crushed whole garlic cloves in the oil. Infuse the oil. Can leave in or take out garlic cloves. - 2 Italian sausage or better yet Italian boar sausage out of their casing. In the pan with oil, brown one side, flip over then break up. Move to the side of pan or remove to bowl. Leave the oil. - add diced mushrooms, not too small though. Cremini or white, or any mushroom you want. However many you want, they shrink down as you cook. Add more olive oil if you need. Salt and pepper to the mushrooms. Mushrooms will release ..read more
