I’m working on a pantry clean out and I have a lot of exotic flours that aren’t getting used up. I don’t eat a lot of bread or desserts but I bring desserts to church potlucks or youth group. Does anyone have potluck suitable recipes using teff flour, millet, sweet rice, chickpea flour or fairly coarse sorghum flour? No nuts or oats please. Yeah I know what y'all are probably gonna say, what did you expect, they have so much cross contamination, etc. And I know all of that, but I owed my spouse a celebratory dinner of their choosing, and they chose Texas Roadhouse. I really tried to make it work though, as I have NCGS and can sometimes get away with some cross contamination risk. I looked at their gluten-friendly menu and ordered a steak, mashed potatoes, and a salad with no croutons or dressing, which they assured me would be GF. You guys… I’ve been craving Brazilian steakhouse and I know a lot of their dishes are traditionally gluten free. I called a place to ask if their churrasco (the meats that come around on swords) are gluten free, or if there are some that I need to avoid. The girl said “It’s okay! Most of them don’t have butter!” I tried really hard not to laugh and said “oh, thank you. My 6 yr old has been asking for noodles and pasta sauce all week. I had originally planned to make regular for my family and gf for myself. It just seemed easier and my son seems to have the ability to notice when his favorite foods change. Like, I don’t even bother buying generic cereal bc he can taste it lol. I work in an office with a shared microwave. My daily lunch consists of an apple, some yogurt, some homemade broccoli slaw, and a serving of left overs. I do a big Sunday meal prep of two main dishes that will give me enough frozen leftovers for two weeks of lunches. BUT WHAT ABOUT THAT SHARED MICROWAVE OVEN? No chance I’m using that thing casually. I bring a serving of leftovers in a mason jar or other container. I transfer the leftovers to a “vented ceramic mug.” Search online for this phrase. Comes with a tight lid that has a small vent. I asked my doctor for a coeliac test and he said I should have a blood test for antibodies. I have not booked it yet. I asked him if I should eat a diet containing gluten prior to the test but he said no. However, I read on my country’s coeliac society website that I should not avoid gluten before the test. I don’t know what to do. I have eaten a gluten free diet for over 4 years and I’m terrified of eating gluten again as it bloats me and gives me fatigue and nausea. Hey everyone! Not sure if this is the proper place to ask about medical records, but here goes. Firstly, I have celiacs. I just started a new hybrid job that requires me to commute 50 miles to and from the office twice a week. I have had bad experiences with traffic combined with gastrointestinal distress in the past which would cause me to be late to work, or just turn around in traffic all together and head back home. They help keep me regular! That’s pretty much all that needs to be said. I drain the can, season it with lemon or oil and salt/ pepper, leave the Tupperware in the fridge and eat them over a 4 day period. If i don’t finish them in 3 days then I roast them so they don’t go bad. It really has helped much more than any fiber supplement. Gummies or powders to mix in.
