This past December, I removed gluten from my diet (not diagnosed celiac or intolerant but have reason to suspect I may be one or the other) and have adhered quite rigidly to a gluten free diet in the time since with only a couple slip ups. Cognition and sleep quality improved almost immediately upon removing gluten, however my emotional stability has plummeted. I think my dream of eating gluten again has come true, but I am so confused. Background: I had all the symptoms of gluten intolerance (diarrhea, extreme bloating, brain fog, fatigue) and after cutting gluten out for three days I felt a million times better.
