Here we are, almost two years into this and it feels just like it did at the beginning. In late November 2021, another new variant, Omicron, arrived on the global scene. In just over a month, it’s become the dominant strain in the U.S. and is spreading wildly, even among the vaccinated and boosted. I got my second dose of the vaccine in early April, and have now been fully vaccinated for a few months. We are preparing for a full return to in-person work next month. I’m also starting Ph.D. work in the Fall (officially, I’ve taken a couple classes already) with in-person classes, for the first time in 20 years. I suppose I should feel safe by now, but with the Delta variant already dominant in the U.S. (closely following the U.K./Alpha variant, and possibly to be followed by a new Lambda strain,) it just doesn’t feel like we are anywhere near out of the woods just yet. Here it is, the end of March 2021, and I’ve received one of two doses of the COVID-19 vaccine. So far, not much about my lifestyle has changed – I’ve now been working from home for over a year, and I still only go in a few stores, ordering online/curbside pickups whenever possible. Most of my family and friends in the state are at least half-vaxxed along with me, and by the end of May it seems like we might all be fully vaccinated. And yet. I wish I had thought to start this back when it first started, but honestly I don’t think anyone really knew we’d still be living in the upside down nine months later. I’ve written in the past about the cold beet soup I discovered on my trip to Lithuania a few years ago. In fact, I have been making a dairy-free version of it for a while. I figured since I’ve got it nailed down, I should probably share, since it is vegan, paleo-friendly and Whole 30. I started with this recipe from Arousing Appetites, and modified the heck out of it.
