Drunken noodles, aka pad kee mao, is a delicious, slurpy street Thai dish that’s surprisingly easy to make (at least with my recipe!). Despite the name, the recipe does not call for any alcohol. Apparently they are called such because they make for great hangover food (can confirm!) and are best served with a cold beer.  I can’t remember the first time I had drunken noodles, but it must have made an impact on me because I go straight for it whenever I eat Thai. When I lived in Italy in my early 20’s I was OBSESSED with pesto. My roommates and I would head to this little forno (Italian bakery) near our apartment and buy a big tub of fresh pesto with a couple of warm, crusty baguettes. The pesto, unsurprisingly, would last about a day, maybe two if we were restrained. The pesto, and the daily gelato, probably definitely contributed to the few additional pounds I took home with me! Sanctua is a brand new, fully vegan restaurant that just recently opened in Oadby, and is the first of its kind in Leicester. I first heard about Sanctua back in December last year, and the concept thrilled me. The restaurant is the brainchild of Bindu Patel, AKA Chef Bee, who has worked at Michelin star restaurants, including Gymkhana and Trishna in Mayfair, London.
