Growing up in the Midwest, I have a few vivid memories of goulash. It was a weeknight dinner recipe that my friend’s parents made, and I remember having it at their house when I was sleeping over. If you’ve never had American goulash, it’s sort of like a thicker, stew-like homemade Hamburger Helper. It’s flavorful, rustic and very comforting. Went to the beach with our family this past week. It was a very special trip and likely one of my last until sometime after the baby is born this summer. This was the second time for Oscar to go to the beach and while I’d still say he loves playing in the sand more than anything, it was fun to watch up warm up a little to the ocean. We also were traveling with a few of his cousins, so it was fun to watch them all play together.
