We thought Spring was here a week ago, and suddenly we wake up to 37 degrees F. That’s why I’m reposting this really easy soup that will warm you up, and can serve as a whole meal. Chicken and white bean soup has all the feels and flavors. Made Italian style with carrots, onion, celery, Italian parsley, garlic, white cannellini beans, the soup is finished with pecorino or parmesan and a drizzle of olive oil.  This recipe uses canned white cannellini beans, and left over chicken or rotisserie chicken and boxed broth. You can make your own chicken stock and cook beans from scratch. While t ..read more

Grilled Bok Choy with Balsamic

Who knew bok choy could be roasted or grilled? My favorite farmer at the Nolensville Farmer’s Market (where I sell my keto baked goods) has been selling bok choy all winter because he has a green house and I’ve been purchasing weekly. Bok Choy is actually at its prime in winter months, as it loves frost. Keeping it Simple with Balsamic On a lazy day I decided to douse with some olive oil and throw on the grill. Wow. All it needed was salt, pepper, and some good balsamic vinegar. This is a great idea when you it’s one of those busy days where you throw some steak, pork chops or chicken on the g ..read more

Italian Ground Beef, Peas and Onions
Spinach Tiger

I am republishing this 20 minutes RECESSION DELICIOUS recipe (initially posted in 2012) because grocery prices are crazy right now. This is fast, delicious and can be altered.  We love this ground peas and peas just as is, but you can add in pasta, potato or rice. One day in the past, I stumbled upon a video of a 91-year old Italian-American grandmother, cooking pasta and peas just the way her mother cooked them nearly every night for her family during the depression. She used an onion, a potato, and a can of peas,…. all items that didn’t need refrigeration and cost mere pennies. This to ..read more

Spinach Tiger

There are many meatball recipes here at Spinach Tiger, and I’m happy to add one more. Classic Swedish meatballs with a cream-based gravy has been on our menu twice in the last week! As an Italian, I never understood meatballs in brown gravy, but my mind was changed when I saw Jamie Oliver demonstrating Swedish Meatballs in a unique and fast way to and I was eager to make a similar Keto friendly version. This recipe is a sugar free, keto friendly and a take on “his” version. Where he uses cranberry jam, I used my own sugar free strawberry sauce, but I kept the vodka, the dill, the caraway see ..read more

If you think duck confit is a meal you can only enjoy in a restaurant, this easy recipe will change all of that. Perhaps you’ve never had this French peasant dish that has surged in popularity even on menus that aren’t French. What is Duck Confit? Confit means to cook food in its fat. Low Carb Blueberry Tarts

This is my new favorite dessert. If you love blueberry pie and you don’t eat sugar, you will be thrilled. I think I found the secret to cutting the sugar, the grains and the carbs in this American classic dessert, low carb blueberry tarts. The blueberry filling is made ON TOP OF THE STOVE FIRST, and then filled into almond flour tart crusts. Blueberry pie and blueberries in general have a special place in my heart, so naturally, I wanted to find a way to make low-carb blueberry tarts. I have so many memories of picking blueberries with the boys, and sadly that farm next to us closed down. We ..read more

Savory Ricotta Fritters with Quick Tomato Sauce
Spinach Tiger

The first time I saw ricotta fritters, I was watching Jamie Oliver on the screen in the nail salon. What could be better than low-carb Italian fried ricotta fritters, a dish I had never heard of? Unlike his recipe, I skipped the flour, and added mozzarella cheese. Trying both ricotta fritters with and without the mozzarella, the added cheese won out, and serves as an extra binder, adding to the texture, and making this truly low-carb. The tomato sauce is made quickly with one large can of Marzano Plum Tomatoes, which is ready when the fritters are done. This dish takes about 30 minutes active ..read more

Italian Sausage Lentil Kale Soup

I just watched two teen boys eat two bowls each of this delicious Italian Sausage Lentil Kale Soup as an after school snack. Additionally, I served this very soup at a potluck lunch and everyone wanted the recipe. That tells you everything you need to know about this flavorful, classic, soup, that can serve as a full meal. If you’ve been to Carrabba’s, you may have already eaten something similar, as their sausage lentil soup is very popular. I’m inspired by their soup and added in my own touches, and tastes. Which Lentils to Use for Lentil Soup Truthfully, I wondered this myself so I venture ..read more

Keto Black and White Cupcakes

Keto black and white cupcakes are my personal favorite lala cakes (my name for my type of cupcakes) in my keto bakery. This has the best of everything. Chocolate cake with a touch of espresso powder, topped with vanilla buttercream, and then topped again with a drizzle of chocolate ganache. Once I started making the black and white for the bakery, I knew this would be a staple that would always be on the menu (and always in my freezer). What I Love Most About the KetoBlack and White Cupcakes Taste – The combination of double chocolate and vanilla buttercream delivers the perfect bite for the ..read more
