Hot Cross Buns are an Easter tradition I have adopted during the nine years I have lived in the UK. I have not been keen on shopbought hot cross buns even prior to my coeliac disease diagnosis, I have found them too dry and dense. When Pancake Day is celebrated in the UK to mark the start of lent, in Finland Shrove buns are eaten (Semlor in Sweden). On 5th February, Finland celebrates their national poet Johan Ludvig Runeberg with a dedicated almond flavoured cake. I had never done these, so adapted a version of my own from a Finnish gluten-free recipe by Valio.
