This week has been proof of the goodness of God - one after another after another. If you're new here, you won't know how hard this year has been for me. I've been in despair and depression, searching for medical answers, growing the YouTube channel, and then all of a sudden I was forced to completely shut down around the end of October.

As many of you know, I've been really having a rough time lately. Everything was fine until we had to stop making progress on the house. That's when I started to despair of ever having a home again. Don't get me wrong, I'm grateful that we have this RV. Yes, it's basically glamping, but it's not a home. We run out of hot water in the shower in the winter even though we take Navy showers to conserve water.
In my house I'll have a tub! We'll have a tankless water heater and we'll never run out of hot water. The house won't shake when people walk around in it. The house won't smell like RV. We'll ..read more

I wanted to enjoy some sweet treats over the holidays, but I also wanted to remain keto. I found several recipes online and made them. They are ALL WINNERS! I'll likely be making them again for Christmas time.
This is the recipe I used for the chocolate truffles. This recipe is crazy easy! I used regular chocolate chips for these since they were for non-keto folks, but to make them keto is super easy - just make sure to use Lily's chocolate chips or Choczero.

Tomorrow is Thanksgiving 2023 in the US. It doesn't really feel like Thanksgiving yet, even though I've already watched all of the FRIENDS Thanksgiving episodes. My husband's side of the family is hosting on the day, and my side of the family is hosting on Friday. So, there's gonna be a lot of feasting going on!

It's easy to pin that down when you've been eating right for almost two years, but flare up anyway. I've been under a tremendous amount of stress lately. I got a brain scan months ago that told me that my brain was in constant fight or flight mode. Then I did an at home sleep study that indicated early and middle sleep insomnia. I'm going into the clinic for the next sleep study. I initially looked into it because I'm not getting deep, restorative sleep.

How am I, mentally?
This has nothing to do with a Taylor Swift song and everything to do with my current mental state. I need to take a break from YouTube.

Short answer - water.
Long answer - it doesn't have to be still water! I actually like still water, but I tend to drink that at night only after I've brushed my teeth. During the day, I drink sparkling water.
Now, if you've priced out sparkling water - flavored or not - at the store recently, you'll see that it isn't cheap at all. And the flavorings they use in the unsweetened sparkling water are unclear as to what they actually contain.

I'm going to share with you some of my personal life. I am not doing this to ask for anything. Well, except for prayer. I'll take all the prayer I can get!
As some of you know, my husband Daniel and I have been building our home with our own two hands. He works full time. I work full time on YouTube, and I also homeschool 3 children and keep the house tidy. Then on the weekends we would go and work from dawn to dusk on the house. There are pros and cons to everything in life, and the carnivore diet is no exception! I'll share with you what I've learned the past 22 months of doing this lifestyle regarding the good, the bad, and the ugly of this diet.
THE PROS
