Poor Man's Burnt Ends are burnt ends made from chuck roast instead of brisket like traditional burnt ends. They are called poor man's burnt ends because of the price of a chuck roast. Even though in 2024, chuck roast is more expensive per pound than brisket, chuck roast is much smaller in total weight so overall it is cheaper.   Crack Burgers made on a griddle are one of the most delicious burgers I’ve ever tasted. My friend Jarrett Stidham, NFL QB, said they belong on the Mount Rushmore of burgers. This Creole Butter Turkey Breast comes from my love of cajun fried turkeys plus my love of Texas style turkey breast. Any time I fry a turkey I inject it with creole butter. In this recipe and video I combined the two by injecting a breast, seasoning it with our Holy Voodoo + Garlic & Herb and smoking it central Texas style with post oak.
