Poor Man's Burnt Ends are burnt ends made from chuck roast instead of brisket like traditional burnt ends. They are called poor man's burnt ends because of the price of a chuck roast. Even though in 2024, chuck roast is more expensive per pound than brisket, chuck roast is much smaller in total weight so overall it is cheaper. This is a fantastic option to make "burnt ends" for under $30.

Crack Burgers made on a griddle are one of the most delicious burgers I’ve ever tasted. My friend Jarrett Stidham, NFL QB, said they belong on the Mount Rushmore of burgers.
Full disclosure, I had never had one until Jarrett and I made them together for this video. I had seen the recipe on Facebook, but at the time of making these, I never knew anyhone that had made them personally. I figured, how can a burger with Ranch, sour cream and cheddar cheese in it be bad? Bonus, we seasoned these with my favorite burger seasoning – BLANCO!

I had Chicken Fried Bacon for the first time at the State Fair of Texas years ago. Since we love chicken frying various proteins, and we make a very popular Chicken Fried Breading, I decided to create my own recipe and video for the Meat Church Congregation. These Cheesy Pull-Apart Meatball Sliders topped with garlic butter are a delicious game day snack. We love to use King's Hawaiian rolls to make these for tailgates, but we also love to grill these sliders to take to the lake or any outdoor activity for that matter. You can cook 12 or 24 at once and have yourself a great snack for a crowd.

Matt Pittman appeared on The Tonight Show staring Jimmy Fallon on Monday February 5th, 2024. It was the thrill of a lifetime to be included on such an iconic show. Jimmy and his entire staff were so nice and accommodating. King Ranch Casserole is classic Texas comfort food. This southwestern dish is very simple, and very delicious.
No one know the origins of this casserole. It is not tied to the massive 825,000 acres King Ranch in South Texas. It seems related the Mexican dish chilaquiles. It was popularized using canned ingredients in the 1950s and every Texan family has a slightly different variant. This particular recipe comes from my good buddy Aaron Lain and his mother.

This Creole Butter Turkey Breast comes from my love of cajun fried turkeys plus my love of Texas style turkey breast. Any time I fry a turkey I inject it with creole butter. In this recipe and video I combined the two by injecting a breast, seasoning it with our Holy Voodoo + Garlic & Herb and smoking it central Texas style with post oak. We did this with a turkey lobe, but you can also create these results with a bone in turkey breast or whole turkey. The result were the juiciest turkey I've ever eaten. See for yourself!

I had to jump on the 2023 viral Smashburger Taco trend. Smashburgers are my absolute favorite way make hamburgers. In true Meat Church fashion we had to kick this trend up a notch by starting with grinding up a a brisket in this video for the 80\20 meat that is needed.
