These lovely Christmas cookies are so healthy I reckon you can probably eat as much as you like without any need to feel guilty… if you prefer a sweeter treat then by all means go ahead and ice them and they will still be far better for you than basic gingerbread.
I’ve topped mine with pretty edible flowers, if you don’t have access to this then another great healthy topping idea is to drizzle the cookies with sugar-free chocolate.
