Life Lately We made a quick trip to Vegas last week to sneak in a bit of fun before my next surgery, when I’ll be stuck at home again for a while. ? We enjoyed the gorgeous views… Perfect weather and great food… Some delicious (but expensive!) cocktails, and time by the pool… Plus we explored Red Rock Canyon in a scooter, and for the finale–we saw Garth Brooks in concert! It was a great little getaway, and I’m sure we will be back. In Case You Missed It… I hate throwing food away, and do my best to use up things in our fridge to prevent food waste. This Easy Cobbler Recipe is a great way ..read more

Life Lately I promised you a few pics from our Easter weekend. I didn’t capture quite as many as I wish, but I was busy enjoying it all, so here are just a few of the babies. The weather was warm on Saturday afternoon, so we had our Easter egg hunt in the backyard. Evie was old enough this year to really participate. Hayden was more of a bystander. ? He did enjoy a swing with his sister in the new “Rocket Swing for Two” that the Easter Bunny left for them. (If you want to get one too, the Easter Bunny told me they can be purchased at Target.) Then, we all settled in to cheer for the Iowa Haw ..read more

Life Lately Happy Easter, friends! Baby Hayden turned 3 months already! He’s filled out so much already that his parents call him “Bruiser”. ? He has the sweetest smile that fills his whole face. I spent a couple of days visiting the littles last week. Evie and I tried the method of coloring eggs with whipped cream and food coloring in a bag. As you can see, they didn’t turn out too colorful, but we had fun anyway. And the whipped cream was a hit! It’s going to be a busy weekend around here. We are hosting Easter at our home this year. We had a fun dinner Friday night with some of our out-o ..read more

Life Lately We had a few lovely warm days before some cold, rain, and light snow moved in again late this week. Fortunately, we were able to take the bikes out a couple of times on the nice sunny days, and that helped my spirits tremendously after so much time trapped at home recently. My cabin fever is severe this year. Anyone else? All of the kids will be here this weekend for Easter, and also some of our relatives from out of state that we don’t get to see often enough. I’m hoping for the nice weather to return so we can have an Easter egg hunt outside with the littles. In Case You Missed ..read more

Life Lately Happy St. Patrick’s Day, friends! Did you go out and party last night? Yeah, not us. We made a little corned beef and cabbage in the crockpot and watched the next episode of Garth Brook’s new docuseries, “Friends in Low Places”. Wild, right? We’ve got a couple of trips in the works right now. Vegas, to see Garth at Caesar’s Palace, and Nashville, where Garth’s new Honky Tonk just opened, so this series is kind of fun to watch. In Case You Missed It… If you are celebrating St. Pat’s at home today, here are a couple of easy ideas: An easy tablescape, and delicious Baileys Chocolate ..read more

Life Lately My husband recently surprised me with this Ninja Creami. Pre and post-surgery, I’m supposed to be increasing my protein intake. This has been pretty hard for me, because I’m not much of a meat eater. At a minimum, I’m supposed to get 100 grams of protein per day, and when I started counting it, I realized I’ve been nowhere close to that much. I’ve seen many recipes that are made with protein shakes and powders, so we thought this might be a way to include more protein. However, I also don’t drink cow’s milk and only use plant-based milks. We’ve tried a couple of recipes with almo ..read more
