This beetroot and pumpkin salad is pretty as a picture. But it tastes just as good as it looks drizzled with this beautiful goats cheese salad dressing. Perfect for a crisp autumn day.
As I write this, the clocks have ticked along and somehow we’re already in autumn. Where the year has gone I have no clue, but autumn brings with it tons of delicious seasonal veg. Pumpkin being one of the most lovely (this pumpkin feta tart is proof). To make this roast pumpkin and beetroot salad extra special, the pumpkin is roasted with all the sweet things. Red onions, crushed garlic and if that’s not sweet ..read more

This stuff goes with everything! Lemon and dill aioli is super versatile and is great for dunking, dipping, slathering and generally devouring with most foods. It goes especially well with grilled seafood, dolloped on a beef burger, wrapped in a flatbread with this juicy lamb rump, or just served with hunks of really good sourdough to mop it up.
It’s really simple to make this lemon and dill aioli recipe. If you’ve got the time (which is pretty unheard of nowadays!) it’s nice to make it in a pestle and mortar. Smashing up the garlic is pretty therapeutic after wrestling two small children into ..read more

Hot, golden and crisp chicken, dipped in a fiery, soy and sesame sauce. Tori no karaage (sometimes called tori kara age) has got to be one of my all-time favourite dishes. This recipe makes for the most moreish Japanese fried chicken around. Crack open a beer and enjoy on a warm summer’s evening.
To really load the tori no karaage with taste, give it a good marinade before frying. Ginger, sake and soy, give the chunks of chicken so much flavour. Make sure you choose a really good quality soy sauce as you will definitely taste the difference – I use Kikkoman as it’s DELICIOUS! The great thing ..read more

Gochujang Jjigae is a delicious Korean stew that’s been fired up with gochujang paste. It’s often made with meat such as ground pork, but this is a slightly lighter take on the recipe made using the best tofu that I’ve found. Totally vegan and really easy to throw together in minutes (just like this EPIC vegan traybake).
The paste for Gochujang jjigae is made from spicy red peppers and adds a good whack of heat to this vegan tofu stew. It also adds a beautiful warm colour to the dish. The paste I used was deliciously savoury thanks to a hint of garlic and onion. You can easily pick up Go ..read more

Bun cha ca is a beautiful noodle soup that’s topped with the most delicious Vietnamese fish cake. A really easy and moreish recipe that’s healthy and quick to make.
One of the reasons bun cha ca is so delicious is because of its broth. Sweet tomatoes, fragrant dill and sour tamarind all come together to make a clear and tasty broth. A traditional recipe would call for a fresh stock made from fish bones, but with a gorgeously chatty little girl and a small baby crawling round, that’s not going to happen in my house. Instead, I kept things simple and used fresh chicken stock flavoured with jarre ..read more

This prawn Pad Nam Prik Pao is my new favourite thing. A quick and simple Thai prawn stir fry that you can whip up in minutes, making it perfect for a healthy, exciting midweek meal or an easy weekend treat.
Pad Prik Pao is a Thai chilli paste that’s loaded with roasted red chillis, shallots, garlic and a little shrimp paste. It’s sweet, spicy and delicious. I’ve mixed it with a little soy sauce in this recipe, giving the Pad Nam Prik Pao a salty edge that’s full of umami goodness.
To make this Thai prawn stir fry extra special, I sourced some really delicious prawns. If you can get your hand ..read more

Gnarly and crisp Jamaican style pulled duck, piled up on top of beautiful creamed celeriac and parsnip mash, it really is delicious. The perfect pulled duck
This pulled duck recipe is so easy and with all those incredible Jamaican jerk spices, you can have a very special dish for very little effort. To make this jerk duck, you need to get yourself some really good jerk seasoning. Living in Stroud, we have the most awesome company called Tubby Tom’s just down the road. I’ve tried a few of their products and it’s fair to say, they’re absolutely epic! For this recipe I used Tom’s Bam Bam pi ..read more

Courgette season is drawing to a close here in the UK (it runs from June to October), so what better way to use up one of my absolute favourite veggies than in this beautiful courgette / zucchini antipasti. This roasted courgette and cumin dip is full of interesting flavours that marry up perfectly with the humble courgette, but what’s best is that it’s so easy to make. Fire the courgettes in a hot oven and let them sizzle away for a short while, then you just whizz them up with all the other delicious flavours and you have the perfect healthy courgette dip / toast topper ..read more
