Coffee flowing too fast
Your coffee is old, or older than the last batch you have used. Older grinds will flow at a faster rate. If you like the coffee, the faster speed is flowing faster does not matter. Solution: Adjust grind size smaller
The grinder top was opened to clean, and the wooden circle was replaced in the wrong position. There are two groove indents for the screw heads to sit in. If you place them the wrong way, the wooden circle will be elevated, elevating your burrs and resulting in a larger grind size. Instructions for Espresso Machine Storage
Single Boiler (LELIT Anna, Anita, Victoria, Kate)
Clear your machine's only boiler:
Activate the hot water function to heat boiler up to hot water temperature. Drain all hot water out through the steam wand.
Draining through the brew function is not recommended as the pump is activated and will pump water or air in if the portable water tank has been removed.
Heat Exchanger (LELIT MARAX, MARA)
Clear both compartment of your boiler.
Heat the machine up to optimal temperature when the steam is hot.

If you:
haven't used your E61 machine in months and left the water inside
haven't descaled your machine in years
live/lived in a country with hard water

Cascara is the flesh of the coffee cherry fruit. It's the spanish word for husk, peel or skin.
How is Cascara processed?
After the seeds have been removed from coffee cherries, the pulped skin is commonly dried before export due to biohazard regulations and concern over fermentation during transportation.

Flush 2-10g of cascara with hot water and toss
Put washed cascara with 300g of 50-60°C of water in a French press or strainer

What is Honey Processing?
Coffee cherries are picked, sorted, and skin removed. Next, instead of washing off the all the flesh & mucilage like in washed processing, the beans are sent straight to dry instead of waiting to dry it at around 11% moisture content in natural processing.
Laid on drying beds, the beans are raked or agitated every hour till a a designated moisture level. This process uses lasts 6-10 hours for at least 6 days. The mucilage left on the bean after drying is then mechanically removed.

What is a PID?
Pressurestat
In an espresso machine without a PID, a pressurestat controls the temperature of the boiler by detecting pressure. When it’s too high or too low, the pressuestat sends a signal to the heating element to either heat up or cool down the temperature.
