Freekeh is an ancient preparation of wheat going back thousands of years. The key is to harvest the wheat early in the season while it is still green. Its name means “to rub” in Arabic because we rub the green wheat heads in between our hands to gauge whether it’s ready to harvest. The wheat berries must be fully formed yet fresh. If harvested too early, they’ll turn to mush; too late it’ll just be mature wheat.
