Food allergies are an immune disease, not a choice, and not a lifestyle. In addition to my life-threatening food allergy, I’ve developed autoimmune arthritis, specifically psoriatic arthritis, and also chronic gastritis, which may or may not be related to the arthritis. And with those diagnoses, I’ve developed food intolerances. This is an adaptable allergy-friendly gluten-free shortbread cookie using teff flour. I can have almond flour, so I use almonds and often pistachios for an adapted version, but other alternative flours can be used such as flaxseed flour, oat flour, or other nut/seed flours. This is a cane sugar-free recipe as well, using coconut sugar and maple syrup.

This is an allergy-friendly version of Alton Brown’s Chocolate Chia Pudding. I trust basically everything Alton does, his recipes always turn out phenomenal! You have to use Dutch-processed cocoa powder so that it blends with the liquids. Most often someone purchasing a flight is determining which flight to take based on factors such as the number of stops, the cost, and the dates available. For people with disabilities and life-threatening food allergies, the decision isn’t always based on those same criteria.
