It’s all about the Courgette It’s that time of year, the end of summer and courgettes are in abundance, the gardens are over flowing with big green baseball bats and everyone in our village wants to offer me one. Even when l politely say ‘no thanks’, there are always a few left at the front door of an evening. So, rather than looking a gift horse in the mouth, l accept the challenge and try and make a few recipes up that don’t all look and taste the same. This first recipe is a courgette slice, taken from my Mum many decades ago and now made into my own vegetarian version that l call a courget ..read more

Finding the time As time passes, l become more aware of the unique little bubble Hugh and l have created for ourselves on a mountain. It was a choice to be remote, a choice to live with nature, pure air, little noise, with ever changing, jaw dropping beauty. The old days of running here, there and everywhere, left us long ago, replaced with a gentle pace of appreciation.   Now, I know this isn’t everyones cup of tea, to be far from the hustle and bustle of life, but I’m sure and certain there will come a day when you reflect and know it’s time stop. Time to rest and feel the ground stand ..read more

Opi’s Birthday Bash Last weekend it was Opi’s 2nd birthday and it seemed like a great excuse to invite some of her friends up for a drink by the fire. Those friends are special because they still love her after having either lost one of their socks, maybe a shoe or inner sole and if they stayed over, there is a sure chance they had a rude awakening ( dive bombed from a distance). A few of you have asked for the pooch cake recipe, so here it is. This cake is easy, full of delicious ingredients that your fur baby will love. Of course, one small slice is enough and because it’s full of carrot, it ..read more

A few reasons to bring a courgette into your life Did you know that a courgette contains NO fat, is high in fibre and water. It also holds lots of vitamins C, K and B6 and minerals, potassium and manganese. Also a nutrient-dense food, containing antioxidants and anti-inflammatory properties which help slow ageing. It helps improve your digestion and helps prevent ulcers, IBS and colon cancer. Move over carrots – courgettes have a great combination of eye healing nutrients that can help fight off eye disease and degeneration. All parts are edible – the skin, the seeds and those that have a flow ..read more
