Ingredients:
Steak – I took 2 steaks 100gms each.
Pepper powder or crushes as required.
Salt to taste
2.5 tablespoon oil
1 medium size onion
1 medium size Potato
1 clove of garlic
Coriander for garnish
Optional ingredients:
Bancal sauce 1 teaspoon
Small tomato cut into slice.
Preparation:
1. Keep the steak whole or cut into desire size as I did.
2. Wash the steak.
3. Apply salt and pepper ( I like more pepper but its as per your taste and liking and Bancal sauce if using)
4. Set its aside for 15 minutes.

Ingredients:
300-400gms salted pork or overnight salted pork
2 clove of garlic
4-5 kholchyo / cancona chilies
1 tomato (big size)
1 large onion chopped
3 tablespoon tamarind water
4 -5 kokum petals
Salt to taste
¼ cup water or as required
Preparation:
1. Apply salt to the pork and let it sit overnight in the fridge.
2. Next day wash and cut the salted pork into cubes.
3. Now add little water in a pan and boil the tomato (add a slit on top), chilies and garlic.
4. Boil till the tomatoes are soft.
5. Peel off the tomato skin.

1 ¼ teaspoon ginger and garlic paste.
1 Maggie cube (10gms optional)
2 medium potatoes cut into cubes (big size)

Ingredients:
150 – 200gms Cabbage
⅓ Cup grated carrot
1 small onion copped
1 large tomato chopped
3-4 green chilies
¼ teaspoon sugar.
Juice of a small lime
¼ teaspoon vinegar
Salt to taste
Preparation:
1. Wash the cabbage and cut it very thin into strips.
2. Add this to a bowl.
3. To this add the chopped tomato, onion, green chili and grated carrot.
4. Now add salt sugar and lime juice.
5. Give the salad a good mix (I like to use my figures to mix).
6. Add vinegar and mix again

80 – 90 dried Vellyo / Motyallim / Erleo / Sprats
2 large onions finely chopped
2 – 3 green chilies
1 sprig of curry leaves
⅛ teaspoon red flakes of chili
⅛ teaspoon turmeric
¼ teaspoon chili powder
2+2 tablespoon oil (coconut oil preferred)
Salt to taste
Preparation:
1. Clean, cut the head, stomach & tail; set aside.
2. Now wash the dry fish.
3. In a pan take 2 tablespoon oil and sauté the dried Vellyo / Motyallim till nice and crispy.

Ingredients:
2 cups rice flour
Water as required (hot enough to touch)
Salt to taste
¼ cup rice flour to use for rolling
Preparation:
1. Made 1 cup of water hot and keep it ready.
2. Next knead the flour with salt and water little at a time (don’t pour all the water at one time).
3. Water should be hot but hot enough to handle.
4. Knead to form a dough ( some folks will add the rice flour to the pot and stir before forming a dough)

1 cup freshly grated coconut

This recipe is using the slow cooking process and the meat that was used in this recipe were tough cuts of meat that took time to cook. Now a day’s folks use pressure cooker to speed up the process. If the pieces were cut big then the cooking time with this method might increase to 2 ½ hours on hot amber.
