One of our very favorite cocktail categories is also one of the simplest. Just three main ingredients - sugar, fresh lime and spirits - create some of the tastiest cocktails around! We’re always shocked that such great cocktails can be so easy, and so good.
Gimlets are a prime example of an all-star cocktail made from sugar, lime and spirits. Prickly, floral Szechuan Pepper and the familiar fresh-herb characteristics of Rosemary go great together and perfectly complement a wide range of botanicals in gin. They up the ante on the classic G&T and elevate it to something complex and delicious.
Ingredients:
Highball glass
3 oz. Gin
4 oz. Tonic water
Rosemary Cocktail Spice
Szechuan Pepper Cocktail Spice
Ice
Lime Wedge
Instructions:
Fill a highball glass to the top with ice cubes.
Add gin.

Developed by bad-ass mixologist and cocktail consultant Ben Newby for the re-imagined Bin 36 in Chicago, the Tarratan pairs the savory, green flavors of Tarragon and celery bitters with the vegetal, agave goodness of triple-distilled tequila. This one is smooth, but it has complexity and depth that sneak up on you!
The Tarratan
In a mixing glass add:
1 unrefined sugar cube
1 blast of Addition Tarragon Cocktail Spice
2 dashes of celery bitters

Aged rum has delicious oaky flavors of vanilla and cinnamon, along with a complex sweetness. The bitter fruit in the Aperol combined with the intensely savory maple / burnt caramel flavors of the fenugreek perfectly complement and balance out the woody sweetness of the rum; these flavors work together to produce a balanced, complex cocktail that’s easy to make and only requires a few ingredients. Plus, it looks great – the Aperol lends a beautiful vermilion color and it almost looks as if it was lit from within.

If you enjoy Manhattans and you like spicy, you have to give the Bakerman a try. Deep, velvety soft and rich with a hint of smoke and a spicy finish, there is an awful lot to love in this cocktail.
INGREDIENTS:
Up glass
2 oz Rye (use Sazerac 6 year if you have it, Bulleit Rye is a great substitute, bourbon will work in a pinch)
.25 oz Carpano Antica Formula
.25 oz Ramazzotti
Chipotle Cocktail Spice
Ice
Orange twist

Mmmmmmmmmm – whiskey ginger. . . the combo of oaky American whiskey and spicy, sweet Ginger Ale (or Ginger Beer) gets even more interesting with the addition of Tarragon and Thai Green Chili Cocktail Spices. It may seem counter intuitive, but scotch and curry are an amazing combination. The intense savory flavors in Curry are strong enough to stand up to the peaty, oaky character of scotch, resulting in a well-balanced, incredibly complex cocktail that’s both easy to make and very, very drinkable.
