A summer twist on what seems to be yall's favorite dessert to date. Oatmeal creme pies blueberry style!
These are so easy and could not be more fun to assemble. Fold in fresh blueberries, add sprinkles, or just devour as is-- fair warning, they are really really good.
WET
2 flax eggs ( 2 tbsp flax meal + 3 tbsp water)
1/3 cup coconut sugar
2 tbsp maple syrup
1 tbsp molasses
2 tbsp unsweetened applesauce

You knew a few strawberry recipes were on the way after our last trip to Cottle Farms here in Columbia SC.
Roasting strawberries is one of my favorite ways to use up this summer produce before they spoil, and today I decided to take it one step further and toss them into a no-bake cheesecake.
She is creamy, tart, and bursting with summer flavor…and the date-cookie crust just makes it that much sweeter.

Well, it has been a minute! Thank you for always sticking with me on here even when I am offering you nothing haha. But these muffins are not nothing!! They are quite the opposite.
Super easy ( no flax eggs your welcome) , sweet, and delicious! The "strawberry shortcake" topping is a real winner too and the only thing that requires a specialty ingredient -- aka freeze dried strawberries.
We all have or will have some strawberries that need to be used this season, so save and repeat!

Meet the Superfood Chopped Salad.
My tastebuds were craving something light, flavorful, and ingredients that would help me glow from the inside out.
Each ingredient has a little nutritional star power, especially the protein content in the lentils and edamame!
There is something about a salad where everything is finely chopped, there is a perfect crunchy texture , and it has an ideal salty/sweet ratio in each bite.

It's January, it's 70 degrees outside, and it's Friday. All of these things equal one thing .. blueberry muffins. It's like a little teaser that we are moving into spring, and yet we all know that is not the case. Next week will be back to puffer jackets and beanies, but for now let's just relish in the higher temperatures.
