This Carrot Cake is my go-to recipe for birthdays, and it’s the cake my friends and family request the most. The “magic” is the addition of a caramel like glaze that soaks into the cake layers that are loaded with carrots, pineapple, pecans and coconut. Of course, no Carrot Cake is complete without tangy Cream Cheese Frosting, and I add a little zing to the frosting with orange zest…trust me on this one.
