Personal sharing time! (◠ω◠✿) The past few months I have been “booked & busy”, but feeling really upset at the end of each day. Working SO HARD, yet my to-do list was never ending. So, it's the day after Thanksgiving. Your fridge is stuffed with leftover filled Tupperware, foil covered platters, and just thinking about eating all of it over and over and over again is unamusing. This feeling is what I call Leftoverphobia.

Ingredients:
1/2 cup solid vegan butter
3/4 cup coconut sugar
1/2 tablespoon maple syrup
1/2 teaspoon almond extract
1 teaspoon vanilla extract
1/3 cup pumpkin puree
1 1/2 cups gluten free flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 1/2 teaspoon pumpkin pie spice
1/4 teaspoon Himalayan pink salt
Melted vegan white chocolate

4 medium sweet potatoes
3 tablespoons olive oil
4 tablespoons vegan butter
1/2 cup diced red onion
4 medium garlic cloves, diced
1 1/2 cup Arborio rice
1 2/4 cup Pinot Grigio
4 cups veggie broth
2 heaping cups sweet potato mash (from roasted potatoes)
1 tbsp nutritional yeast
1 tablespoon vegetable seasoning
1/4 cup vegan parmesan
1/2 cup unsweetened vegan heavy cream (I used this)

1 cup frozen banana slices
