Mangoes are big in the east, they’re big in my families household, and like every S ..read more

Broccoli – either hated or loved. Most of the time I find it to be loved. And I personally LOVE it. This is Episode 5 of My Ecokitchen where I share recipes for normally discarded items. And let me tell you – the recipes are DELISH! In case you missed it – Episode 1, Episode 2, Episode 3, and Episode 4 are all here! But while most people eat broccoli, they’re not really eating broccoli. They’re only eating the florets, which means that 50% or more or the actual broccoli is going into the trash and ultimately the landfill. And that is a NO NO in My Ecokitchen. As of 2020, i ..read more

Watermelon rinds you say? What blasphemy is this, Priyanka?! It’s true! They’re edible and the star of Episode 3 of My Ecokitchen self-produced series, where I showcase low-waste recipes in April for Earth Month! See Episode 1 & Episode 2 here! Americans LOVE their watermelon – it IS the favorite melon in the US according to the USDA. So much so, each American eats on average 14.1 pounds of watermelon a YEAR (I probably eat 20 pounds). That is a LOT. But that also means a ton of watermelon WASTE! Every culture has some form of “pickling,” mainly to help preserve fruits and vegetables over ..read more

Eco-Cooking: Episode 1 Carrot Top Pesto

What can we be doing as individuals to help our planet? Well, it starts on our plate. No, I’m not trying to “brainwash” you into becoming vegan, but I am trying to raise awareness on how our actions affect the environment (and mostly negatively, unfortunately). For instance – food waste. Over 40% of the food supply is wasted in the US alone and I am so passionate about trying to minimize this waste that I even did a TEDx Talk on it AND have the first eco-column in The Washington Post called ECOKITCHEN (it’s free to subscribe FYI!)! While we can’t all go and change sanitation systems, we CAN af ..read more

Classic Pakoras
Chef Priyanka

Ever have pakoras? No?! You are missing out on one of the easiest, tastiest and most popular household Indian snacks! They’re crispy Indian fritters generally made with the ‘classic’ mix of onions and green chilies, but they come in ALL variations – sliced potato, eggplant, spinach leaves, cauliflower, stuffed long hot peppers, tomato – you name it, it’s been pakora’ed. Growing up, we would generally eat them on occasion or when it was a cold, rainy, dreary day – for whatever reason, they just warm you right up and turn that dreary day upside down! They are best served with chai, but I also li ..read more
