The Platinum Jubilee inspired me to made a classic Victoria sponge. I think this is the first time I have ever made one which is surprising. I am not royalist and I truly believe we would be better off without them but I loved having the extra time off work and an excuse for more cake and tea in the day. These sweet, buttery and tasty cardamom buns are to die for. They take a bit of time but are completely worth the effort. The first time I ever tried a cardamom bun was during my PhD where a Swedish postdoctoral Scientist in our department baked some and brought them in. My Mum turned 60 in December and to celebrate I decided to bake a special birthday cake. I made a vanilla layer cake with vanilla buttercream and strawberry jam. We started homebrewing beer back in February 2020 and I can't believe a whole year has passed! We have wanted to brew beers for years and finally started just before the first UK coronavirus lockdown. I imagine it would have petered out while trying to balance full-time work and social engagements but the sudden need to stay at home meant that we had plenty of time to brew and we brewed a lot. A light refreshing American pale ale homebrewed to be shared with friends. This was our Christmas beer that we brewed to share with friends. Sadly because of the coronavirus lockdown, this was not possible but it did mean we ended up with many bottles of this lovely light beer. We based our beer on a recipe from the book, Brew better beer by Emma Christensen and adjusted it to our small-batch brewing needs. Coconut macaroons are one of my absolute favourite treats. Packed full of coconut, crisp and golden on the outside but gloriously soft and chewy in the middle.
