I love falafel! It’s one of the first things I learned to make when I started to eat fully plant-based. Most falafels you can buy are often deep-fried, and I don’t like that at all, so I had to make my own! I also prefer to bake them in the oven, rather than frying them in a pan. I found the inspiration for this aubergine (eggplant) dip when I visited Greece last summer. I made my own version of it, using less oil and a couple of other ingredients. And it turned out amazing! My favorite way to cook tofu! I don’t like when it’s too soft in texture and the flavor is too bland, it should be firm and full of flavor. I also prefer to bake it rather than frying it. A very hydrating salad with watermelon, cucumber and a lot of leafy greens. I just love this one on a hot summer day! The dressing makes it perfectly tangy and creamy. I like to use red quinoa for this salad, because it has a nice, firm texture.
