Ingredients:
1 – 1 1/4 cup plain flour
1/2 tsp baking powder
1/4 tsp salt
2 eggs
2 bananas
1/4 cup oil
1 cup milk
Preparation:
In a blender, add eggs, milk, oil, bananas, plain flour, baking powder and salt and blend well.
Preheat the waffle iron / maker according to manufacturer’s instruction.
Spray preheated waffle iron with cooking spray. Pour batter into the waffle iron and cook until golden.
Serve with maple syrup or honey or ice cream ….

Ingredients:
2 cups plain flour
1 tsp baking powder
1/2 tsp salt
200 gm unsalted butter, melted
3/4 cup brown sugar
1/2 cup caster sugar
1 egg
1 tsp vanilla essence
1 1/4 – 1 1/2 cup chocolate chips
Preparation:
Preheat the oven to 170 degree celcius. Grease and line a square baking pan with baking paper.
In a large mixing bowl, add melted butter, brown sugar and caster sugar and stir together until well combined.
Add the egg and vanilla essence and stir well.
Then add the plain flour, baking powder and salt and stir until a soft dough is formed.
Gently stir in 1 cup of chocolate chips.

Ingredients:
1 1/2 cup pineapple, chopped
1/2 cup grated coconut
4-5 green chillies
3 shallots
3-4 curry leaves
salt to taste
a pinch of sugar
Preparation:
Crush green chillies, shallots and curry leaves together.
Add grated coconut to this and crush again.
Then add chopped pineapple and crush together. Don’t grind to a paste.
Transfer to a bowl and add salt and a pinch of sugar and mix well.

Ingredients:
300 gm big prawns, cleaned
1/2 tbsp chilli powder
1 tsp pepper powder
1 tbsp ginger-garlic paste
1 tbsp lemon juice
1/4 cup plain flour
1/4 cup cornflour
1 egg
salt to taste
spring roll sheets, as required
oil, for frying
Preparation:
In a bowl, add cleaned prawns, chilli powder, pepper powder, ginger-garlic paste, lemon juice, salt, plain flour, cornflour and egg and mix well. Keep it aside to marinate for 30 minutes.
Cut the spring roll sheets into thin strips.
Wrap the thinly cut strips over each marinated prawns properly.

Ingredients:
1/2 of medium bread fruit/ kadachakka
1/4 tsp turmeric powder
7-8 shallots, crushed
2 garlic cloves, crushed
1 sprig curry leaves
1 1/2 – 2 tsp red chilli flakes / crushed red chillies ( as required)
1/4 tsp pepper powder
salt to taste
1/2 tsp mustard seeds
2 tbsp coconut oil
Preparation:
Peel the bread fruit and slice them into thin pieces and keep inside the water.
In a pan, add sliced bread fruit, turmeric powder and salt and cook covered adding enough water till it becomes soft. Do not overcook.

3 eggs
1 small onion, sliced
3 shallots, sliced
2 green chillies, slit
1 tsp ginger-garlic paste
1 tomato, chopped
1 potato, peeled and cut into small pieces
1 tsp chilli powder
2 tsp coriander powder
3/4-1 tsp turmeric powder
1 tsp fennel powder
1 tsp garam masala
1/2 tsp fenugreek seeds
1 tsp mustard seeds
1 cup coconut milk
salt to taste
2 tbsp coconut oil

Heat oil in a pan and splutter mustard seeds and fenugreek seeds.

5-6 bajji mulaku/ chilli pepper
oil, for frying
For Chammanthi Filling:
1 cup grated coconut
small piece ginger
2 shallots
2 green chillies
2 tbsp coriander leaves
salt to taste
lemon juice of 1/2 lemon
For Batter:
1 cup gram flour/ kadalamavu/ besan
3 tbsp rice flour
1/4 tsp baking soda
1 – 1 1/4 tsp chilli powder
1/4 tsp turmeric powder
1/2 tsp asafoetida
salt to taste
water, as required
Preparation:

Ingredients:
2 1/2 cup muskmelon / shamam, peeled and chopped into pieces
1 tbsp basil seeds
2 tbsp custard powder
500 ml milk
1/2 tin condensed milk
1/2 cup sugar
chopped nuts
few ice cubes
Preparation:
In a blender, add chopped shamam and blend well to a puree and keep it aside.
Soak basil seeds in 1 cup of water for 10-15 minutes.
In a small bowl, add custard powder and 1/4 cup of water and mix well without any lumps and keep it aside.
Heat milk, condensed milk and sugar in a pan at medium flame.
When it reaches boiling point, add custard mixture and mix well.

1 dragon fruit
1 cup ripe mango, peeled and chopped
2 cups chilled milk
sugar as required
Preparation:
Peel and cut dragon fruit into pieces.
In a blender, add dragon fruit, chopped mango, chilled milk and sugar and blend well until smooth.

Ingredients:
2 cups kumbalanga / ash gourd
1/2 tsp + 1/4 tsp turmeric powder
1 1/2 cup yogurt
3/4 cup grated coconut
2 green chillies
2 shallots
1/2 tsp cumin seeds
small piece ginger
1 tbsp toor dal, soaked in little water
salt to taste
1 tsp mustard seeds
3 shallots, sliced
2-3 dry red chillies
1 sprig curry leaves
1/4 tsp asafoetida powder
1 1/2 tbsp coconut oil
Preparation:
