During our trip to Portugal last February, my boyfriend and I found a cute little bakery in Porto, Odete and tried our first vegan pastel de nata. We tried another one made at the popular buffet, Deterra and from there on, we were hooked. Pastéis de nata from Odete, Porto Growing up, I remember often seeing some pastéis de nata in the fridge, a staple dessert in the portuguese culture. I decided to change up my usual grocery round last weekend and went shopping at the new Adonis Supermarket on Saint-Laurent Blvd. Adonis seems to be famous for their nuts and olive bar, to which I’m not complaining about, but I was curious to see what vegan products they had available. Crust⁠ 1/3 cup oats⁠ 1 cup square wheat cereal ⁠2 tsp pumpkin spice⁠ mix ⁠4 tbsp vegan butter⁠ Filling 1 cup pumpkin puree (fresh or from can)⁠ 1 cup coconut milk⁠ (full fat is best) 1/3 cup coconut sugar⁠ 2 tbsp maple syrup ⁠ 2 tbsp cornstarch ⁠1 tsp pumpkin spice mix⁠⁠⁠ Directions Preheat oven to 350ºF. Banana bread is my go-to thing to make. This time around I was out of regular flour so after searching online, I found that you can actually use chickpea flour instead. I’ve made this recipe several times since then and it taste amazing every single time. Sweet potato, coconut milk & peanut butter are not typically used in a traditional chocolate cake but because of those ingredients, you end up with a moist, sweet and decadent cake.
