This vegan ceviche is one of my favorite raw, plant based and gluten-free appetizers sure to please a crowd! Not only is this ceviche refreshing and nourishing, it is incredibly easy to make with very minimal prep work.

You will only need 9 ingredients to make these delicious and easy to make pecan pie bars! There always seems to be a request for pecan centered desserts from my family during this time of year. As much as I enjoy throwing them in savory dishes, there’s something festive about using pecans in desserts around the holidays. 5 years vegan. Never looking back.
March marks my 5 year vegan anniversary but it honestly feels like I’ve been following this lifestyle for way longer. Maybe it’s because my heart has been all in since the very beginning. I’m unapologetic in this pursuit to give the animals the lives that they deserve. I believe in a future where we co-exist peacefully with all beings in this beautiful world we live in.
