Sole Meunière ok, soooo…typically from Normandy but I enjoyed this dish quite a bit during my time in Antibes. Delicate, delicious and comforting all at the same time.
I used petrale sole (deboned) for this recipe, and you can find it at Whole Foods!

Roasted Red Pepper Rigatoni… I was craving a red pepper sauce but also a carbonara, so I took the idea and ran with it. Before you come for my head, I am NOT claiming it is carbonara in any way, shape or form ok? OK? ok…I simply took my favorite elements of it and infused them into my classic roasted red pepper pasta. I will be a heretic here, but I will say that I am not crazy about guanciale, at least not the guanciale I can find in town. I tried it in Italy last year and it was a game changer, but here? I much prefer pancetta.

Milky Dirty Martini I know it sounds…weird…HOWEVER …It is delicious. The blue cheese in the shaker is what makes it look milky and adds a delicious lil funk in a fabulous way. It is life changing. My sister who says she “tolerates” blue cheese but isn’t a huge fan was absolutely obsessed with this. If you love martinis, you have to try my carajillo martini!

Sushi Bundt Cake I understand that it isn’t traditional by any means but it is a super popular dish in my hometown in Mexico! Its original name is rosca de sushi, which translates literally to sushi bundt cake. This has been one of my most viral recipes to date with well over 30 million views across platforms. Carrot Cake Panna Cotta is one of my favorite desserts! So creamy and delicious. I’m aware it isn’t a traditional recipe but after years of playing around with my classic panna cotta recipe, I have been playing around with variations and I have to say, that this might be my favorite!
