We have plenty of flat fish in our waters, and we eat a lot of them – either freshly steamed or pan-fried in breadcrumbs with a dollop of remoulade, which is a piccalilli- type mayonnaise that goes with everything. At the moment you might be wondering what is happening to your favourite meat/fish/dairy products from the Nordics. Why is it out of stock?
Yes, it’s Brexit. Again. You may have assumed that this was all so very 2018, but no, rules are still changing and causing issues for the end consumers (that’s you).
The latest rule to come into force happened on 31st January 2024 which meant that every single product imported into the UK from the EU that is meat or fish (and some dairy products) has to have a so-called “vet certificate”.

This salad is so delicious and a perfect way to use the humble cauliflower. Use whatever grain you like, at the café, we use boiled whole rye grain. Cooked spelt or pearl barley also work well – anything with a good, firm bite.

Print Bronte’s Coconut Granola
There are a million versions of coconut granola on the internet – we are certainly not the inventors of granola. What makes this recipe different is that Bronte packs in as many nutritious ingredients as she can. The original recipe came to her via her sister Ulla, and this adapted version is the one she has on the breakfast table in the Aurell household in London. We also make a vegan version of this in the café, using syrup instead of honey. Makes enough to keep a family of four in granola for a good week

Hej – and welcome to your weekly ScandiKitchen lesson.
We were Sweet 16 on 11th July 2023.
It all started when Jonas and Bronte opened the doors to ScandiKitchen, 61 Great Titchfield St in London. A busy day (they had a baby the same day: Happy 16th Birthday to Astrid, too). From 2 to 40ish, we’ve grown from a cafe to a deli, webshop, wholesalers, supermarket suppliers and cookbook writers. We’ve had so much fun along this magnificent journey.
