I had some chicken in the fridge that either had to be used or placed in the freezer, this happens to me ALL the time. I have a plan in my head on Sunday when I shop, OR chicken is on sale. Then things so sideways and I never make what I thought I was going to. Yesterday I decided to make chicken chili. It was later in the day so I couldn’t use my slow cooker like I normally do for chicken chili so stove top it is. I will start with I don’t love boiling chicken, it just doesn’t work in my opinion. I would call it no love chicken breast. But as I mentioned it was later in the day and I wanted ..read more

Split Pea Soup – using hambone
Cooking at Clark Towers

You may have probably used, tossed or froze your ham bone from Easter. If you still have it around I made a split pea soup that my husband said he would pay money for. That’s a pretty good compliment. I love all kinds of soup but I am not sure if I have ever made a split pea. I used to always give my ham bones to my mother-in-law and she made it. She is going to be 93 in a little over a month and doesn’t have any interest in cooking. She is big on reheating and will eat whatever I put in front of her. I think my hesitance is I never really liked peas so the sound and the look is a lot to be d ..read more

Happy Easter! No this is not in my yard. I wish it was but I’ll stick to buying them from people who know how to grow them or purchase them from people who know how to grow them. All the ones I have ever planted became food for moles or whoever else decided they tasted good! Not sure what you are doing today. The house is quiet for now. Every0ne was here for pancake breakfast then off to do whatever until dinner later. The only difference is I didn’t hid any eggs yet. I will be doing that a little later. This year I will hide eggs for the 30 something’s and a 1 year old. I guess no crazy hidi ..read more

Yesterday was a beautiful day here in NH. I was out shopping and stopped at my favorite place to get a good steak The Flying Butcher in Amherst. https://www.theflyingbutcher.com/ This is also the place with the best pork chops around. Since having their Hatfield pork chops we haven’t eaten any other kind. Ya they are that good! Not only do they have wonderful meat to choose from. This is my go to spot for lunch, I get their smoked turkey BLT every time I am near there and it might be sort of close to lunch. My husband loves that I bring him home the other half of my sandwich. Just wanted to gi ..read more

I have made a lot of different desserts from various countries for our #worldwidewednesday family dinners. The funny thing about it they are mostly all made with everyday ingredients, they are similar in tastes but can sometimes be made slightly different. I am going to share with you a bar cookie that I made called Hungarian Pastry. I make a pretty similar one Raspberry Squares the few differences are this bar doesn’t have oatmeal, this bar separates the eggs and whips the egg whites. Both bars are delicious and maybe you will give this one a try. It came together very eas ..read more

Sometimes its nice to have something cooking low and slow for the day and just forget about it. Some days I love to cook some days I have zero interest in making anything. I know I am not alone with this thinking. One way to get out of making dinner around dinner time is to dust off your old crockpot. With SO many different ways of cooking these days. I still have yet to buy anything. Though I did get an air fryer for Christmas a few years ago. How to make food better using your crockpot or slow cooker how ever you want to say it. Is to brown your meat, or saute your onions and veggies. Doing ..read more

Cioppino – seafood stew

I made a large pot of Cioppino last night for some family that were visiting. I bought a bag of mussels, a pound and a half of Cod loin and a pound of sea scallops. To say it was a big hit is spot on. The six of us tried to eat ALL of it. We made a point to eat all the seafood as I am not a fan of leftover seafood. What to do with the flavorful broth and sausage is still a little mystery for me at the moment but I am sure it will not go to waste. There was quite the discussion between my husband an myself to what I was going to make. He was rooting for Bolognese but we just had that a couple ..read more

I am running a little late this morning, I wanted to get to the grocery store when it opened, I know Sunday is a terrible day to shop anyway but throw in a holiday, snowstorm and even the Super Bowl and it gets a little insane. So much so that the market I go to; which is 25 minutes away has a cop directing traffic for most large holidays and usually today.  I got there an hour and a half after it opened but I was able to still find a parking spot and got in and out without pause. I came home and planned on putting everything away and write my blog. My granddaughter was here and she take ..read more

Sitting here thinking about what to write. Made my tea, my husband is making breakfast, I made my list of what needs to get done, looking forward to crossing out what actually does get done. Yes those things tends to happen; I have great intentions and then some things just go sideways. Last night was a little up in the air. I wasn’t sure if we were going to go out for dinner or stay in. I didn’t have a real plan if we were staying in. I had some chicken thighs and some cauliflower that I knew needed to be used. I thought about chopping them up into a sheet pan dinner. Nothing easier than tha ..read more

Steak Sandwich – Argentina street food
Cooking at Clark Towers

A couple of weeks ago my daughter made this steak sandwich that was SO good that she worked from home a few days with me and we had the leftover 2 days in a row. I am actually craving it right now and I could eat it for breakfast no problem. I mean it has an egg in it why not? In Argentina this is considered a street food and I can see that, it is just a sandwich after all. I still recall a sandwich we got when we were walking around Paris that at first glance didn’t have much hope, we thought it was going to be dry. It was anything but, we still talk about it to this day and if I could repli ..read more
