This was so DIFFERENT for me! It was super simple and easy but stove cooked pudding type desserts are just not my usual go to. I am more of a baked dessert type gal. But damn am I converted! It was smooth and creamy, but still light and not too rich. And it really hit the spot! I used Alpro soy milk which I love the taste of. It is mild and slightly sweet, and has a slight creaminess which really lends itself to this kind of dessert. I didn't even used to particularly like soups. I didn't mind them but they weren't on my meal radar. But lately I have been really enjoying using my old veg to make all sorts of tasty variations. Okay so first I was going to make fig jam. Then I was going to make fig and bacon jam. And then I thought that I'd also like a lower carb option so I ended up making a cinnamon and fig jam and then a pumpkin, bacon and onion chutney! To be honest, I am not even certain this qualifies as a chutney. But then again I don't even know what the criteria is sooo.  All I know is that this is delicious smeared on toast OR eaten alone. THIS TEXTURE THO! Yellow cakes have always been my fave because they're traditionally made with butter and always turn out to be such a moist, satisfying, wholesome kind of cake. Victoria sponge can sometimes be too subtle and dry; chocolate can sometimes be too much. No, yellow hits you right in the feels.  This is obviously not your traditional kind, but it is a close second. Plus, adding marshmallows to the top of anything takes it from okay to OKAY YAY.
