This tastes as good as it looks! One of these days I will get around to writing 100 delicious things to do with a rotisserie chicken and this will be number one. Ingredients 1 rotisserie chicken 1 jar salsa 4 ounces Monterrey Jack cheese, freshly grated Instructions Remove and shred the meat from the chicken. As a bariatric post op, it's smart to have "go to" foods that work for the pouch, taste good, are simple to fix, use just a few basic ingredients, that can be on the table in 5 minutes. This is my "go to" meal for breakfast, lunch, or supper. Yum. I also make this by substituting a big handful of baby spinach for the peppers.
