This blueberry loaf recipe was created in a effort to use up some stuff in our apartment before moving out, and it ended up being incredible! It honestly disappeared from the pan… so good. I was trying to use up some blueberries, ghee, and gluten free flour as I only had a little bit of each left. This teriyaki chicken bowl is a go-to week night meal in our house! We love it because you can grill the chicken the same night or meal prep it at the beginning of the week. I like to chop up my veggies at the beginning of the week too so I can’t use my laziness as an excuse to not eat healthy throughout the week! I recently discovered Thai Kitchen’s gluten free brown rice noodles, and they’re delicious! They come in a box with four single-serving packages, so they keep really well if you don’t cook them all at once. I’ll be posting a couple more recipes using these noodles because I’ve been having fun experimenting with them the past couple weeks. Chia seed pudding is such a yummy way to treat yourself as well as nourish your body! They contain omega-3 fatty acids, fiber, iron, and calcium. Below is a recipe for a basic chia seed pudding, but you could also add cinnamon, cocoa powder, stevia (instead of maple syrup), or whatever else to make this your own! I like to top mine with almond butter and fruit.
