Have you ever made muffins in a blender? If not you need to start because it makes gluten and grain-free baking much easier. Gluten is the binding agent that can either make pastries/bread soft or tough when over-mixed. Since we don’t use gluten in this recipe (or any of our recipes) we can easily throw the batter into the food processor and blend away.
