We will be staying in Epernay but are planning on going to Reims one day and are open to traveling elsewhere in the region too. I’ve had a few bottles over the past year that have a fresh herbal note, not vegetal but more like a green herb like tarragon or thyme. Is there something in certain soils that give the wine this characteristic, something in the winemaking process, etc?
