JOY in 2020
Our Health Habit

As we approach Christmas next week and begin to wrap up this monumental year of 2020, I am compelled to write a little bit about JOY.  Okay, you can roll your eyes, but bare with me as I reflect.  As many of you know, joy is a concept that has struck a deep chord with me since the moment I became a mom, eight years ago.  The depth and infinite nature of such a small three letter word continues to inspire me, intrigue me, challenge me, and drive me every single day.   Why am I so focused on Joy?  I think we can all name at least one or two people in our lives that live ..read more

Observations from a 4 day fast
Our Health Habit

It’s important to eat high fat/ketogenic on the day before you fast. Doing so kickstarts the transition into ketosis which is the most important factor determining how you feel. It also seems to provide a good base for satiety during that sometimes challenging first day.  Also make sure you replace vitamins and electrolytes because you’ll be depleting these over the next few days.  Speaking of which…I cannot understand the importance of electrolyte supplementation. In a prior post we talked about the importance of maintaining salt using smart water. Now we are using LMNT, whic ..read more

Grilled Tri Tip With Romesco
Our Health Habit

In the Prendergast home, cooking is a family affair. Although Rachel is the queen of the kitchen, Brendan is the “king of the grill.” And no recipe brings those two forces better together than this one. For those who are unfamiliar with it, Tri tip is a lean, yet flavorful cut of beef that has always been popular in Northern California and is becoming more common on menus across the states today. From a culinary perspective, it’s part steak and part roast. You will want to marinade, season, and grill like it were a steak, but its served sliced like a roast. And although it’s by no means lackin ..read more

Crispy Cajun Cast Iron Shrimp
Our Health Habit

One of our favorite cooking vessels is the cast iron skillet. Cooking in the cast iron really takes a standard stuffed pepper or fillet of salmon to the next level (stay tuned for those recipes). Its no exception that this crispy cajun shrimp is a tasty and simple cast iron meal. I can make this recipe in 15 minutes flat on a weeknight if I’m in a pinch for time. These little swimmers taste great on salads, on top of cauliflower rice, or my personal favorite – taco style in a lettuce wrap (Shrimp Taco Tuesday – yum)! Primal Bolognese Sauce
Our Health Habit

When Fall arrives, there are a few cool weather comfort foods that I get excited to cook. My Primal Instant Pot Chili is on the list of course. Another favorite is Primal Bolognese Sauce. This meaty sauce is one that can easily be made in the instant pot for a quick sauce. But there is just something I love about making a sauce in our dutch oven and letting it simmer all day…. the smells wafting in the kitchen – yes please. I have fond childhood memories of helping my mom in the kitchen and stirring her sauce with a wooden spoon every hour. This sauce is one that I could literally eat by itsel ..read more

Green Goodness Avocado Salsa
Our Health Habit

This salsa is so yummy and takes only 5 minutes to make! If you’ve never tried or heard of avocado salsa, it might sound a little odd to you. But trust me, if you love salsa and you love guacamole this gives you the best of both worlds. I like to use tomatillos because they add a perfect tangy flavor with the avocado, plus keep the salsa a beautiful shade of green. But if you have regular tomatoes on hand they will taste great too. You can dip this with veggies or we also love siete chips as a grain free alternative. Even better, spoon this green goodness over steak, chicken, or even scrambled ..read more

Primal Tabouli Salad

We love to cook lamb in the Prendergast home. Lamb burgers, lamb sausages, lamb meatballs, lamb chops… Yum yum! I created this salad as the perfect primal side-dish to complement lamb with mediterranean flavors (without the grains). This salad goes great with a chicken breast or salmon fillet too! It always satisfies my craving for something cool, crisp and filling. Traditional tabouli salad is a simple Mediterranean salad of very finely chopped vegetables, lemon, olive oil, LOTS of fresh parsley and bulgar wheat. Instead of wheat I use riced cauliflower that I make in the microwave and then c ..read more

Happy Foodie Friday!! Last week I shared my Bacon Broccoli Salad Recipe, and I mentioned that I love to serve it with with my air fryer chicken thighs. What I love about these chicken thighs is they always turn out delicious, they are easy to prep, and they are an inexpensive but healthy, primal meal. I always have a pack of chicken thighs in my freezer for a simple week night meal. Bonus – the kids are always pumped for “chicken on a bone.” I like to make a big batch of my chicken thigh spice blend in advance to have in my pantry. Make a batch in advance to make it even easier to prep! If you ..read more
