Ingredients: 1 medium sized organic spaghetti squash 1 Tbsp organic avocado oil 1 lb organic chicken breast tenders 1 organic purple onion 1 can organic pumpkin 1 can organic full fat coconut milk1 tsp pink Himalayan salt 1 tsp organic basil 1 tsp organic thyme 1tsp organic oregano 1/2 tsp organic garlic powder 1/3 cup organic fresh chopped parsley Directions: Spaghetti Squash: Preheat oven to 375 degrees. I don’t know about you, but the cool Fall temperatures and beautiful trees sure make me crave a Pumpkin Spice Latte! Did you know that a grande pumpkin spice latte from Starbucks has 50 g of sugar and 380 calories! This will wreck your blood sugar and hormones and cause weight gain! Diabetes in a cup!! What is your favorite Fall family recipe?   I have too many to share but one is my Grandma Brogger’s layered cranberry dessert recipe! Her original recipe was amaaaazing but contained many unhealthy ingredients like processed sugar, conventional dairy and wheat/gluten. Because I am fighting Lupus (and it is a fight I intend to win), it is extremely important to avoid such inflammatory ingredients. Since beginning my journey to healing from a variety of health conditions, and eating a very clean and anti-inflammatory diet, one of the things I have really missed is loaded baked potatoes.  But unfortunately these are usually not the healthiest option…. white potatoes are really high glycemic (they are a quick starch that turns right to sugar when you eat it) and can be very inflammatory, especially to those suffering from autoimmune or inflammatory health conditions.  And the “loaded” part is not great either…. usually a toxic meat like pork and lots of dairy!  Yikes!  Tasty, but not so he ..read more

This recipe is sure to add some flavor to your life!  This is great as a topping to my Chicken-Mango-Avocado Stuffed Sweet Potatoes, but can also be added as a topping for cod or flounder, or as a stand alone chip dip!  It’s really yummy paired with Siete Lime Grain-Free Tortilla Chips!
