Hungry for some GF-vegan Peach Cobbler? It’s your lucky day! While it’s hardly peach season in North America, for some reason today is National Peach Cobbler day in the US—go figure!? So I thought I’d share my go-to recipe for Peach Cobbler. This delicious dessert has been around since at least the 1700s when it was first made with a biscuit-like topping over fresh peaches. For my gluten-free, vegan recipe I prefer a more nutty-crumbly topping rather than a biscuitey topping. From a nutritioinal standpoint, peaches are rich in vitamins C and A which help support a healthy immune system and ben ..read more

“If you love Piña Coladas, and…” jello, you’re going to love these Piña Colada jello squares! Not your grandma’s jello. These have a little help from Ultima Replenish Electrolyte powder for the all-natural piña-colada flavoring. Packed with protein and healthy fat, and they are so delicious! As I mentioned in a previous post, Coconut-Vanilla Jello Cubes, gelatin has lots of health benefits. It is great for your hair, skin, nails, and connective tissue, and it’s very beneficial in healing your gut lining. We could probably all use a little TLC when it comes to our intestinal lining. Kiwi-Berry Ice Pops

A few years our marina was giving away free Otter pops for the 4th of July holiday. That got me thinking about eating Otter pops at the pool as a kid… Back then I thought they were delicious. But when I look at them today I see SO many nasty ingredients! They contain high-fructose corn syrup, artificial flavoring, and artificial coloring including red #40, yellow #5 and #6, and blue #1. What ARE all those chemicals doing in our “food” anyway? And what do they actually do to our bodies? Are your popsicles toxic? As you may know, artificial coloring and flavoring have been linked to ADD, ADHD, o ..read more

Paleo Winter Warming Porridge

YUMMM!! Even in Mexico, it’s been cool enough in the mornings that this Paleo Winter Warming Porridge has become our go-to breakfast. It contains ingredients we’d normally put in a smoothie—but it’s not a great idea to eat smoothies when it’s cold out (since cold foods cool you down). So the healthy fats and proteins in the Paleo Winter Warming Porridge keep us warm, as well as help us stay satiated for hours afterward. Plus it’s super delicious! Unfortunately, some recent blood labs indicated Captain Kirk and I both have higher-than-optimal blood sugar levels. No bueno! Even though we eat ver ..read more

How Can Functional Medicine Help You?
Happy Well Lifestyle

Have you been hearing about Functional Medicine recently? It’s been popping up in the news and in social feeds. The popular NY Times best-selling author Dr. Mark Hyman, M.D. is the director of the Cleveland Clinic Center for Functional Medicine. Functional Medicine is the new path that many mainstream AMA medical doctors are taking. But what exactly IS Functional Medicine? And how can it benefit you? “A pill for every ill” has been the norm for treating diseases for many years. However, some forward-thinking MDs are realizing this may not necessarily be the best solution for every “body” or ev ..read more

Sweet Potato Soup
Happy Well Lifestyle

On a cold autumn or winter night, a nice warm soup is the perfect warming food. And this delicious Sweet Potato Soup definitely fits the bill. It has been a holiday tradition in our family for years. And this hearty Sweet Potato Soup was also a favorite at our pot-luck Friends-Givings in Seattle for many years. The recipe was shared with my mom by an old Danish family friend, Inger Koedt, who passed away last year at 106 years old. Inger was an amazing role model for our family on how to live a healthy, happy life. Well into her 100s she could be found hiking or cross-country skiing in the Tet ..read more

If you ever loved “finger Jell-O”, “Knox Blox”, (or Jell-O shooters), these Coconut-Vanilla Jello Cubes are for you! When I was a kid, my mom would make “finger Jell-O” with Knox gelatin and fruit juice, for a healthier version without the added sugar. Recently, as I’ve been trying to find ways to incorporate more protein into my diet, strengthen my hair, and improve my joint health, I’ve turned to an old childhood favorite, gelatin! Gelatin is not only good for healthy hair, skin, nails, and connective tissue, it’s also very beneficial in healing your gut lining too. And most of us could use ..read more
