Sucker for a Kebab   If I was told I could only eat one type of food ever, it would be kebabs or skewers. For the time and effort you need to put into preparing and cooking them, you get a disproportionate amount of flavour (in a good way). Savoury Chickpea Pancake   The Formula 1 Grand Prix moved to Monaco this week and for the F1 cook, I decided to cook Socca, a Chickpea Pancake. Socca is quite prevalent in this region of the Mediterranean, and you may found it called different names such as Farinata in Italy. It is traditionally cooked on a wood-fired oven on a round copper plate. It is a simple recipe, with very few ingredients. Tapas with Spanish Tortilla  For another F1 cook as part of the Spanish F1 Grand Prix weekend, we decided to do some Tapas. The majority was bought (from Basco Fine Foods) but I decided to make a Spanish Tortilla, fully cooked on the BBQ. Preparation and Cook Overall, this was a relatively straightforward cook. How Have I Not Had This Before! One of the great things about doing these F1 cooks is discovering new foods and recipes. I came across a cut of meat I have never heard of before; Secreto Iberico. Oh, my word! The Secreto is a piece of meat hidden behind the shoulder and below the back fat of the Ibericus Pigs. This is where it gets its name of the so-called “Secret” cut, or Secreto, as called in Spain. When reading about this cut, I knew it had to be one of the Spanish cooks. Simple but Great Tasting! One thing I have really missed through the pandemic is holidays abroad. Whilst I love getting away from it all, relaxing on a beach or by the pool, I really love trying the local food.  However, Glenn (aka Just a bit of BBQ on Twitter) commented recently that we don’t need to be on holiday to eat some great produce, which is so true! Piri Piri Chicken – Obvious I Know! As part of my F1 cooks where I am doing a cook from each country where the F1 race is held, I went for Piri-Piri Chicken for Portugal. I know this is quite an obvious one, but a few reasons I chose it. Firstly, I really like Piri Piri Chicken, so it was a great excuse to have it again. Portugal – It had to be Sardines! A little predictable I know, but as one of the Formula 1 cooks, as the championship moves to Portugal, I had to cook Sardines.  I love Sardines at the best of times, so didn’t really need an excuse to cook these again. I have cooked Sardines on the BBQ a few times. Typically I will just season with some Olive Oil and a little salt.
